Chai Tea French Toast with Maple Cream

Make your own chai spice to add to the French toast batter and top with creamy maple syrup
- FRENCH TOAST:
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cardamom
- 1/4 teaspoon allspice
- 1/8 teaspoon ground ginger
- Pinch ground cloves
- 1/8 teaspoon Kosher salt
- 1/4 cup sugar
- 1 cup milk
- 2 eggs
- 1 teaspoon pure vanilla extract
- 4 to 6 slices bread, a sturdier bread is best, challah or brioche is great
- Vegetable oil for the griddle
- MAPLE CREAM:
- 2 cups maple syrup, Grade A
- 1/8 teaspoon salt
- 1/8 teaspoon canola oil
Asparagus and Chicken Stir-fry

- 1 pound boneless skinless chicken breasts (about 2 breasts)
- 2 cloves garlic, minced
- 1 (2-inch) piece peeled fresh ginger, cut into thin matchsticks
- 1 tablespoon soy sauce
- 1 tablespoon sugar
- 1 tablespoon cornstarch plus 1 teaspoon
- 1 1/4 teaspoons kosher salt
- 1 tablespoon dry sherry
- 3/4 cup chicken broth, low-sodium canned, or homemade or water
- 2 tablespoons vegetable oil
- 2 bunches medium asparagus (about 2 pounds), woody stems trimmed, sliced into 1-inch pieces
- 1 bunch scallions (white and green parts), thinly sliced
- Serving suggestion: Brown or white rice

- 1 (16 ounce) package dried penne pasta
- 5 tablespoons olive oil, divided
- 2 skinless, boneless chicken breast halves - cut into cubes
- 1/2 cup low-sodium chicken broth
- 1 bunch slender asparagus spears, trimmed, cut on diagonal into 1-inch pieces
- 1 clove garlic, thinly sliced
- 1/4 cup Parmesan cheese

Was playing around and this turned out really well, so here it is
- 1 frozen whole young chicken with giblets and neck removed
- 1 frozen bag caldo medley frozen vegetables (has onion, carrot, celery, small red potatoes and corn on the cob segments)-I found it at Kroger, but you could use any medley of hardy vegetables.

- garlic salt
- black pepper
- parsley
- lemon juice
- Chiavetta's marinade (a local product from Buffalo, NY area. You can order it online, or use a tasty, vinegar based marinade of your choosing)
