- 4 small sweet potatoes baked
- 1 (15 oz) can black beans, rinsed and drained
- 1 cup corn fresh or frozen
- 3 green onions, thinly sliced
- 1/2 c. cilantro, chopped
- 2 tbs limes juice
- 1 tbs oil
- 2 tsp honey
- Pinch salt & pepper
