Bring pot of salted water to boil over high heat
- 8 oz. orecchiette pasta
- 1 Tbs. olive oil
- 8 Tbs. unsalted butter
- 1 cup canola oil
- 1 large sweet onion, such as Vidalia or Maul, diced
- 1/3 cup all-purpose flour
- 2 cups milk, warmed
- 2 oz. fontina cheese grated, about 1/2 cup
- 2 oz. sharp white Cheddar cheese, grated, about 1/2 cup
- 3 Tbs. freshly grated Parmesan cheese
- 1 large shallot, thinly sliced
- 1/4 cup rice flour (can substitute cornstarch)
- 1 tsp. snipped fresh chives
- 1 tsp. chopped fresh parsley
- Salt and freshly ground pepper, to taste
