- 1/2 c fresh yellow corn kernels
- 2 cloves garlic, minced
- 2 c heavy cream
- 2 egg yolk
- Kosher salt to taste

- 2 T olive oil
- 4 6 ounce halibut fillets
- Salt and Pepper to taste
- 2 c arugula, stems removed
- 1 c cherry tomatoes, halved
- 1/2 c thinly sliced red onion
- 1/4 c fresh yellow corn kernels
Parmesan Pesto Tilapia

Preheat broiler. Pat the tilapia dry with a paper towel
- 4-6 oz. Tilapia Fillets
- 1/4 C. Basil Pesto
- 1/2 C. Freshly Grated Parmesan Cheese
- 1 C. Fresh Tomatoes, chopped

- 4 large halibut steaks, 1 inch thick
- salt to taste
- ground black pepper to taste
- 1/2 cup dry bread crumbs
