Pavlova (Pav) is a meringue cake that has a light and delicate crisp crust and a soft sweet marshmallow center
- MERINGUE CAKE:
- 4 large egg whites
- 1 cup superfine or castor sugar
- 1 teaspoon white vinegar
- 1/2 tablespoon cornstarch (corn flour)
- TOPPING:
- 1 cup heavy whipping cream
- 1 1/2 tablespoons granulated white sugar
- 1/2 teaspoon pure vanilla extract
- Fresh fruit - kiwi, strawberries, raspberries, blackberries, passion fruit, peaches, pineapple, or other fruit of your choice. I like to use fresh blueberries, raspberries and either blackberries or olallieberries
- RASPBERRY COULIS SAUCE:
- 2 (8 ounce) containers fresh or frozen raspberries
- 1 teaspoon lemon rind
- 1 tablespoons fresh lemon juice
- 1/2 cup sugar
- 1/2 cup water
- OPTIONAL:
- 1 tablespoon Chambord (Raspberry Liquor)

There are really two recipes here
- CRUST:
- 12 tablespoons very cold unsalted butter
- 3 cups all-purpose flour
- 1 teaspoon kosher salt
- 1 tablespoon sugar
- 1/3 cup very cold vegetable shortening
- 6 to 8 tablespoons ice water, about 1/2 cup
- BERRIES:
- 8 cups of olallieberries, or any kind of fresh berries in your area
- 1 cup sugar, less, if the berries aren't tart
- 2 tablespoons Clearjel (from King Arthur flour), or 2 tablespoons flour or cornstarch (whichever thickener you prefer)
- 1 tablespoon fresh lemon juice
- 1 pinch kosher salt
- 1 egg and splash water (optional)
