Put the couscous in a large bowl and pour the boiling water over it
- Serves 4 to 6
- 1 cup couscous
- 1 1/4 cups boiling water
- 1 cup loosely packed cilantro, finely chopped
- 1 cup loosely packed Italian parsley, finely chopped
- 1/2 English cucumber, cut lengthwise and very thinly sliced
- 1/2 red onion, cut in half and shaved extremely thin
- 1 lemon, zested and juiced, about 3 tablespoons
- 1/4 cup extra-virgin olive oil
- 1 tablespoon honey or agave syrup, warmed
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cumin

I had some Italian sausage that I needed to cook, and so I began to rummage through my refrigerator
- 1 bag penne pasta
- 3-4 Italian sausage (I used mild, but hot would be good)
- 1 small onion, diced
- 2-3 cloves garlic, finely minced
- 1 red bell pepper, thinly sliced
- 8-12 ounces cremini mushrooms (these are baby portobellos, sliced about 1/4" thick
- 1/4 cup red wine (optional)
- 1/4 cup heavy cream (optional, but great)
- 1 Tablespoon Italian seasoning (combo of dried oregano, thyme, basil & rosemary)
- 1/4 tsp red pepper flakes, more if you like a lot of spice, less if you are using hot Italian sausage
- 1 14.5 oz. can diced tomatoes
- 1 8 oz can tomato sauce
- 1 tablespoon tomato paste (I buy mine in a tube)
