Sweet Potato and Turkey Soup

1. COMBINE the broth, turkey, onion, sweet potato, savory, and salt in a large saucepan
- SERVINGS: 4
- 4 c chicken broth
- 1 lb boneless, skinless turkey breast, cut into 3/4" pieces
- 1 onion, finely chopped
- 1 sweet potato, peeled and cubed
- 1 tsp dried savory
- 1/4 tsp salt
- 1 c fresh or frozen and thawed peas
- 1/2 tsp freshly ground black pepper
- 1/4 lb escarole, stems removed (about 2 c packed)

- 2 12-inch pie crusts
- 2 c. roast beef, cubed
- 2 10-3/4 oz. cans cream of potato soup
- 1/2 c. milk
- 1 c. mixed vegetables, drained
- salt and pepper to taste
- dried parsley, dried thyme and onion powder to taste
Pork Soup with Escarole

In a soup pot place the olive oil, carrots, celery, red onion, parsley, basil, garlic, salt, pepper and oregano
- For the Escarole:
- 2 carrots – diced
- 3 stalks celery – chopped
- 1 small red onion – diced
- 4-5 cloves of fresh garlic – chopped
- 1/4 cup of fresh parsley – chopped
- 1/4 cup of fresh basil - chopped
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1 tsp. dried oregano
- 2-3 tablespoons olive oil
- 5-6 cups of chicken broth
- 2 cups shredded pork (from leftover pork)
- 1 lb. of your favorite macaroni for soup
- Fresh Romano or Parmesan cheese for grating
- 1 head of escarole – cleaned and cut
- 4-5 cloves of fresh garlic - chopped
- 1/2 tsp. salt
- 1/2 tsp. red pepper flakes
- 2-3 tablespoons olive oil

- 1 1/2 lb ground beef
- 1 cup beef or chicken stock (I used homemade bone broth)
- 28 oz canned diced tomatoes or 10-12 whole tomatoes, diced (I used canned)
- 1/4 cup tomato paste
- 1/4 cup red wine (optional) (I did not use)
- 1 tablespoon red palm oil or ghee (I used Palm oil)
- 2 large green peppers, seeded and chopped
- 1 large onion, chopped
- 3 cloves garlic, mashed
- 3 tablespoons desiccated liver powder (I used beef liver as explained above)
- 2-3 tablespoons chili powder (depending on how spicy you like it)
- 1 tablespoon cumin
- 1 tablespoon oregano
- 1/2 tablespoon paprika
- 1 tsp cinnamon
- 1/4 tsp cayenne pepper (optional for extra heat) (I did not use this)
- Unrefined salt and pepper to taste
