Preheat Oven 350 degrees: Combine the ingredients for the rub in a small bowl
- Rub for Chicken:
- 3 1/2 lb. chicken
- 3 carrots
- 3 stalks celery
- 3 cloves garlic
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. turmeric
- 1/2 tsp. curry powder
- 2 tablespoons olive oil
- Dumplings:
- 1 cup flour
- 1 tbs. baking powder
- 1 tsp. sugar
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 tablespoon margarine
- 1/2 cup milk
Eggplant, Portobello and Chicken Stir-Fry

A tasty stir-fry using portabella mushrooms and eggplants
- Sauce:
- 4 T soy sauce
- 4 T Worcestershire sauce
- 2 teas tomato paste or ketchup
- 2 teas sesame oil
- 2 teas sugar
- 1/2 teas cornstarch
- 4 T olive oil
- 1 lb boneless chicken breasts or thighs cut into bite-sizes cubes
- Eggplant about 1 lb. cut into cubes, skin on
- 1 T ginger grated
- 1 clove garlic, minced
- 1/4 lb portabella mushrooms only caps cut into bite size pieces
- Rice for serving
- To make eggplant less bitter, toss cubed eggplant with 1 T salt, place in a colander and let stand for 15 minutes. Pat dry before stir frying. Salt draws out the bitterness and moisture.

- 3 Tbs. olive oil
- 2 (28-oz.) cans whole tomatoes
- 1 large yellow onion, halved and thinly sliced
- 1-1/4 tsp. kosher salt
- 2 cloves garlic, minced (I used 4 cloves and thought it was perfect)
- 1/2 cup heavy cream
- 1/4 cup chopped fresh flat-leaf parsley
- 1/2 tsp. crushed red pepper flakes
- 1 lb. rigatoni
- 1 lb. 1- to 1-1/2-inch cauliflower florets (about 4 cups)
- olive oil
- 10 oz. shredded Fontina (about 2-1/2 cups) (I used 2 cups of shredded Four-Cheese blend from Trader Joe's and 1/2 cup of Fontina)
- 2 oz. freshly grated Parmigiano- Reggiano (about 3/4 cup)
