Crust: Sift flour and sugar on pastry board
- Crust:
- 2 C flour
- 2 egg yolks
- 4 Tbsp milk
- 1/2 C powdered sugar
- 1/2 tap vanilla or lemon extract
- 1/4 lb butter
- Filling:
- 1 1/2 lb ricotta
- 1 lb cooked wheat
- 2 c sugar
- 3 egg yolks
- 3 egg whites
- 1 c boiled milk
- 1/2 c finely chopped citron and orange peel
- 3/4 tsp cinnamon
- 1 1/2 tbsp. Orange water

Combine macaroni, cucumber, green pepper, radishes, onion, and salt and mix well
- 2 c (7-oz) elbow macaroni, cooked, drained
- 1 c chopped cucumber

- 1 t white distilled vinegar
- 1/4 c green pepper

Puree the smoked salmon and cream cheese in a food processor until smooth
- 8 oz/250 g smoked salmon pieces
- 4 oz/125 g cream cheese
- Salt and pepper to taste
- 8 (4”) fresh pasta squares (I found these at the Italian Centre Shop, in the freezer section)
- Semolina flour or cornmeal for dusting
- 1 tbsp butter 2 tbsp coarse grain mustard
