- 8 oz/250g macaroni(preferably long tubes as opposed to typical American macaroni)
- 1 tablespoon butter or margarine
- 12 oz/375g sharp cheddar cheese, grated
- 1 egg
- 1 cup 8floz/240ml milk
- 2 teaspoons onion powder
- 1 teaspoon hot English mustard
- 1 teaspoon white pepper
- 1 teaspoon salt
- 1/2 teaspoon red pepper sauce or cayenne pepper (optional)
- 2 tablespoons fine breadcrumbs
- 2 teaspoons butter
- 2 tablespoons grated cheddar cheese
Orecchiette Pasta with Chicken, Cranberries, Goat Cheese & Sage Cream

1. Place white wine in a small pot
- 4 oz dried cranberries
- 1/4 c white wine
- 1 1/2 c heavy cream
- 1 lb grilled, sliced chicken breast
- 2 T sage
- 1 l/2 lbs cooked orecchiette pasta (3/4 lb dry weight)
- 12 oz fresh goat cheese
- salt and pepper to taste
Smoked Salmon Pasta with Fresh Tomatoes, Basil and Goat Cheese

Heat olive oil in a large sauté pan over medium heat, add bacon and cook until lightly brown
- 4 ounces New England smoked salmon*
- 1 1/2 tablespoon extra virgin olive oil
- 1 slice local smokehouse bacon, chopped into 1/4 - 1/2 inch pieces
- 1/2 cup sliced leek

- Sea salt or kosher salt to taste
- 4 ounces thin spaghetti or linguini
