One of mom's creations! Pork falls off the bone
- 6 center cut pork chops (1/2" to 3/4" thick)
- 1 can (13 oz) sliced mushrooms
- 1 large onion-sliced & separated
- 2 cans (15 oz) peas (drained)
- 2 cans (14.5 oz) Italian stewed tomatoes
- 6 stalks celery - 1/4" slices
- 6 carrots - 1/4" slices
- 6 - 8 red skin potatoes (half lengthwise)

Melt butter in a large frypan
- 2 tablespoons butter
- 1/2 cup finely-chopped onion
- 1/2 cup chopped green pepper
- 1 package frozen sausage meat, thawed
- 3/4 teaspoon salt
- 1/4 teaspoon ground oregano
- pinch garlic powder
- 1 3/4 cups water
- 1 can beef broth
- 1 3/4 cup elbow macaroni
- 3 tablespoons flour
- 2 cups milk

- Hot green chiles to taste (roughly 2 or 3 serranos or 1 or 2 jalapenos), stems broken off, roughly chopped

- 1 large, ripe, avocado, pitted, flesh scooped from peel and roughly chopped

- For finishing the tlayudas:
- 1/4 About 1/4 cup fresh-rendered, room temperature pork lard (preferably the kind with bits of brown cracklings in it's what's called asiento in Oaxaca) or vegetable oil

- 1 lb. pork tenderloins, cut crosswise into1/4-inch slices

Begin by browning the turkey over medium heat with the olive oil
- 1 tbsp. olive oil
- 2 lbs. ground turkey
- 3/4 cup dried cranberries
- 1/2 cup dried apricots, chopped
- 2 bunches green onions, thinly sliced
- 7 oz. roasted chestnuts, chopped (These are usually jarred and can be found at most supermarkets this time of year)
- 1.5 tbsp. smoked paprika (spicy if you’ve got it)
- 1 tbsp. coarse salt
- 2 tbsp. fresh sage leaves, sliced (about 15 leaves)
- 2 15 oz. cans pureed pumpkin (NOT Pumpkin Pie filling!!)
- 8 oz. ricotta cheese
- 1 tsp. ground cardamom
- 16 oz. (2 boxes) Whole Wheat lasagna, cooked
- 1.5 cups shredded mozzarella cheese
- 5 sage leaves for garnish

- 1/3 c flour
- 1/3 c salad oil
- 1 large onion, chopped
- 1 garlic clove, minced
- 5 beef bouillon cubes

- 1/2 tsp worcestershire
- 1/4 tsp pepper
- 5 medium potatoes, cut in chunks
- 1 16 oz bag carrots, cut in chunks
- 1 10 oz pkg frozen peas

- 1 1-lb. pork tenderloin
- 1 TB. ARIZONA DREAMING
- 4 Cups cooked rice
- 1 TB. canola oil
- 1 large onion, chopped
- 1-2 TB. ARIZONA DREAMING
- 11/2 Cups water, divided
- 11/2 Cups chopped fresh tomatoes (we used cherry tomatoes)
- 2 tsp. honey
- 1-2 TB. fresh cilantro, finely minced (optional)
- 1/3 Cup sour cream
