I had a container of fresh Mission figs that I decided to experiment with
- 1 container fresh Mission figs (about 12-15 figs)
- 1/2 cup sugar
- Zest of 1 small orange
- Juice of one small orange (about 1/4 cup)
- 2 tablespoons balsamic vinegar
- 1/4 cup Ruby Red Port (optional, but takes it to a new level)
- 1/4 cup almonds, toasted and finely ground

- Cakey version:
- Ingredients
- 2 1/2 cups All Purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 teaspoon salt
- 1/2 cup (1-stick) butter
- 1 cup brown sugar
- 3/4 cup white sugar
- 2 eggs
- 3/4 cup sour cream
- 3 tablespoons lemon juice (about 1 large lemon)
- 1 teaspoon lemon zest
- 1 cup fresh blueberries
- OR
- CHEWY VERSION:
- 1 3/4 cups all-purpose flour
- 1 cups bread flour (can use AP flour, but won't be as chewy)
- 1 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup (1-stick) butter, cut into cubes
- 1 cup brown sugar
- 3/4 cup white sugar
- 1 egg yolk
- 1/4 cup lemon juice (about 1 to 2 large lemons)
- 1 teaspoon lemon zest
- 1/2 cup sour cream
- 1 1/2 cup fresh blueberries
Southwestern Chopped Salad with Cilantro Lime Dressing

A tex-mex style salad with an incredibly creamy Greek yogurt cilantro dressing that will knock your socks off!
- (local, organic, + non-GMO if possible!):
- 5 cups chopped romaine lettuce
- 1/2 cup cherry tomatoes, halved
- 1/2 cup canned corn kernels, drained
- 1/2 cup canned black beans, drained and rinsed
- 2 tablespoons chopped fresh cilantro leaves
- 1 avocado, halved, seeded, peeled and diced
- 1/4 cup tortilla strips, for garnish
- Cilantro Lime Dressing
- 1 cup loosely packed cilantro, stems removed
- 1/2 cup Greek yogurt <-- vegans sub raw cashew dressing
- 2 cloves garlic
- Juice of 1 lime
- Pinch of salt
- 1/4 cup olive oil <-- extra virgin, cold pressed
- 2 tablespoons apple cider vinegar

- 4 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 2 cups buttermilk, shaken *
- 2 teaspoons vanilla (not in original recipe)
- 1/4 pound (1 stick) unsalted butter, melted and cooled
- 1 1/2 teaspoons grated lemon zest (I used more, probably closer to 2+)
- 2 extra-large eggs, lightly beaten
- 2 cups fresh blueberries (next time, I would increase this to 2 1/2 - 3)
- I make my own buttermilk: put 2 T lemon juice in measuring cup, add milk to 2 cup line and let sit to thicken.
