Crock Pot Pork Tenderloin with Apples and Sweet Potatoes

- 2-3 lbs pork loin
- 3 granny smith apples, thick sliced skin on
- 1 Bosc pear, thick sliced skin on
- 3/4 cup white wine
- 1 cup apple cider-not apple juice
- 1/2 cup chicken broth
- 2 large onions, roughly chopped
- 1/2 tsp nutmeg
- 1 tbsp garlic, minced
- 1 tbsp fresh rosemary, minced
- 2 bay leaves
- 4 sweet potatoes, peeled and cut into quarters
- 1 tbsp olive oil
- 3 tbsp butter (1 to sauté, 2 for the crockpot)
- 1 tbsp kosher salt
- 1 tsp ground black pepper
MOP SAUCE FOR PULLED PORK

MOP SAUCE: Combine all ingredients in a nonreactive bowl and stir until salt and brown sugar are dissolved

- 1 CUP BROWN SUGAR
- 2 ORANGES- HALVED
- 1 LARGE WHITE ONION-SLICED THICK
- 4 CLOVES GARLIC CRUSHED
- 6 (12-OUNCE) PORTERHOUSE PORK CHOPS
- APPLE WALNUT SLAW
- 4 GRANNY SMITH APPLES-CORED AND JULIENNED

- (4) 4-oz each boneless center cut pork loin chops, preferably thick-cut
- 2-oz brie cheese
- 2 Tbsp all-purpose flour
- 1 tsp pepper
- 1 tsp paprika
- 2 tsp canola oil
- 1 cup chicken broth
- 3/4 cup unsweetened apple cider (Used unsweetened apple juice)
- 2 large garlic cloves, halved
- 1 tsp dried rosemary seasoning
- 2 cups herb-seasoned stuffing mix (Used Stove Top Stuffing mix)
- 1-1/3 cups chopped apple (approximately 1 medium apple)
- Garnish- 1 apple, cut into wedges
- Garnish- 2 fresh rosemary sprigs
