This chicken dinner is perfect for a meal where you want to do the prep work ahead of time
- 4 small chicken breasts, or 2 large chicken breasts, halved
- 1 tablespoon butter
- Italian Dressing mix (half the packet)
- 1 tablespoon vegetable oil
- 6 ounces fresh baby spinach
- 4 garlic cloves, minced
- 2/3 cup half and half
- 2/3 cup mozzarella cheese, shredded
- 1/8 teaspoon salt
- 1/4 cup sun-dried tomatoes, drained of oil, chopped into smaller bites
- 4 slices bacon, cooked
- 4 slices of pepper jack cheese (Monterey cheese with jalapenos)
Chicken Avocado Lime Soup

In a large pot heat 1 Tbsp olive oil over medium heat
- Ingredients:
- Chicken Avocado Lime Soup
- 1 1/2 lbs boneless skinless chicken breasts*
- 1 Tbsp olive oil
- 1 cup chopped green onions (including whites, mince the whites)
- 2 jalapeños, seeded and minced (leave seeds if you want soup spicy, omit if you don't like heat)
- 2 cloves garlic, minced
- 4 (14.5 oz) cans low-sodium chicken broth
- 2 Roma tomatoes, seeded and diced
- 1/2 tsp ground cumin
- Salt and freshly ground black pepper
- 1/3 cup chopped cilantro
- 3 Tbsp fresh lime juice
- 3 medium avocados, peeled, cored and diced
- Tortilla chips, monterrey jack cheese, sour cream for serving (optional)
Stir Fried Chicken with Carrots and Spinach

- 1 pound boneless skinless chicken thighs, cut into bite-sized pieces
- 2 teaspoons vegetable oil, plus 2 tablespoons
- 1 teaspoon sesame oil

For Marinade and Kabobs Combine all of the above for the marinade and place in a container with the chicken
- 8 boneless chicken thighs – cut into chunks
- 3 bell peppers – any color – sliced into chunks
- 1 1/2 large onions – sliced into large pieces
