- 1 1/2 cups diced onion
- 1 cup diced celery
- 1 cup diced carrot
- 3 large cloves garlic, minced
- 1/2 teaspoon sea salt
- Freshly ground black pepper to taste
- 3/4-1 teaspoon mild curry powder
- 1 teaspoon paprika
- 1/4 teaspoon dried thyme
- 2 cups dry red lentils
- 3 cups vegetable stock
- 3 1/2-4 1/2 cups water
- 2-3 teaspoons chopped fresh rosemary (see Tip)
