Tuscan Bean, Chicken, and Italian Sausage Soup

Cook sausage in a large pot over medium-high heat until cooked through and completely browned, 5 to 7 minutes
- 3/4 pound Italian chicken sausage links, casings removed and sausages cut into 1/4-inch pieces
- 1 onion, chopped
- 1 yellow squash, sliced
- 2 cloves garlic, pressed
- 1 (32 ounce) carton chicken broth
- 2 (15 ounce) cans white beans, drained and rinsed
- 1 (15 ounce) can Italian-style diced tomatoes
- 2 cups baby spinach leaves
- 1/3 cup red wine
- 1 teaspoon Italian seasoning
- 3 tablespoons grated Pecorino-Romano cheese
SQUID - Sausage Stuffed Squid

1. squid Clean the squid and set aside in the refrigerator
- 1 lbs. squid bodies (approximately one dozen whole tubes)
- 4 links of good quality hot Italian (pork) sausage; alternatively, you can make a stuffing mixture from ground pork, garlic, chili pepper flakes and whole cumin
- 6-8 vipe ripened tomatoes
- 2 Tbsp. ajvar (relish made from roasted red bell peppers, eggplant, garlic and chili pepper); can be made fresh or store bought (Vava is a reputable brand)
- 3 Tbsp. extra virgin olive oil
- 1/4 cup semi-sweet wine (recommend: Sherry)
- – Basil or tarragon for garnish
Chipotle Mole Negro Sausage

We make this sausage with pork butt, but you can try this with beef, chicken, turkey, or a combo
- 2 lbs pork butt (also known as pork shoulder, interesting anatomy, eh?)
- 4-5 slices bacon, chop into 1 inch chunks
- 1 head garlic peeled and minced
- 1 red onion finely minced
- 1/2 cup chopped cilantro
- 3 TBS fresh ground black pepper
- 2 tsp flaked sea salt or kosher salt
- 2 TBS mole negro powder or Aztec rub
- 1 tsp chipotle chili powder (or good New Mexico red will do)
- 5 chipotle chilis en adobo, chopped
- 1 TBS additional adobo sauce from the can
- 1 cup shredded sharp chedder cheese
- 1 cup good beer.. (Negro Modelo is good in this recipe)
Pork Andouille Sausage with Red Beans and Rice

This is the quicker method - used can beans, less cook time
- 1 cup rice - cooked - white or brown
- 4 oz of Andouille sausage, sliced
- 1 medium onion diced small
- 1 tablespoon of oil
- 2 garlic cloves, finely chopped
- 1 15.5 oz Kidney Beans (light or dark red) drained and rinsed
- 2 teaspoons Cajun seasoning (amount to taste)

- several drops of Tabasco sauce to taste
Chorizo, Chicken & Shrimp Faux Paella

Had all these ingredients in the house and thought "how about paella or creole" so here's what I came up with,
- 5-6 slices of slab bacon
- 1 onion chopped
- 1 red or green pepper chopped
- 2 small hot peppers chopped
- 1 stalk celery chopped
- 3 scallions with green top sliced
- 4 cloves garlic chopped
- 2 tsp dried shallots (or 1 shallot chopped)
- 2 tbsp dried roasted tomatoes (or 2 roma tomatoes chopped)
- 5-6 links of chorizo
- bay leaf
- 3 tsp Sazon seasoning
- 1 tsp any type Creole seasoning
- 3 boneless & skinless chicken breasts
- (season with black pepper, salt, garlic powder and smoked paprika)
- 2 cups rice
- 1 can (14.5) oz chicken broth
- 5 cups water
- 1 envelope of chicken boost
- 1 can of cannelini beans drained
- 1 lbs of shrimp (I used the really small one) (medium size)
