This is a low-budget meal, because the cut of pork is very inexpensive

  • CILANTRO AND LIME SOURCREAM:
  • 2 teaspoons olive oil
  • 1 1/2 -to 2 pounds pork butt roast (you can use pork sirloin because it's lean)
  • 3 to 4 fire roasted poblano peppers* or 1to 7 ounces can whole green chiles
  • NOTE: Or, use a quality brand of Chili Verde Sauce, about 1 1/2 cups or 12-ounces.
  • 5 to 6 cloves of garlic, minced
  • 1/2 cup sour cream (I used non fat)
  • 1 to 2 tablespoons cilantro, chopped
  • Juice of 1/2 a lime
  • 1 large onion, cut into rough chunks
  • Dry Rub (note, measurements are approximate; adjust to suit your taste)
  • 1 tablespoon dried oregano
  • 1 tablespoon cumin powder
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder

I originally saw this Pulled Pork recipe on Food Network, Emeril Lagasse in 2004

  • Emeril's ESSENCE Creole Seasoning (also referred to as Bayou Blast):
  • 1 pork shoulder roast (Boston Butt or Picnic roast), about 6 to 8 pounds
  • 4 teaspoons Essence, recipe follows
  • 1 tablespoon salt
  • 1 teaspoon cayenne pepper
  • Homemade Barbecue Sauce, recipe follows
  • 10 to 12 sandwich buns
  • 2 1/2 tablespoons paprika
  • 2 tablespoons salt
  • 2 tablespoons garlic powder
  • 1 tablespoon black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon cayenne pepper
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • Combine all ingredients thoroughly.
  • Yield: 2/3 cup

This recipe works very well with cut up pork chops, or pork tenderloin (even better)

  • 1 lb. pork loin, fat trimmed and cut into cubes about 1 inch square (I used 4 thick pork loin chops)
  • 1 Tbsp + 1 Tbsp. sweet paprika (use Hungarian or Spanish paprika in a tin for best flavor)
  • salt and fresh ground black pepper for seasoning pork
  • 2-3 Tbsp. olive oil (depending on your pan)
  • 8-12 oz. cremini or white mushrooms, washed and cut into thick slices
  • 2 Tbsp. tomato paste (my adaptation)
  • 1 onion, finely chopped
  • 1 T finely minced garlic
  • 1/2 tsp. dried thyme
  • 1/2 tsp dried caraway seeds, ground or crushed (optional, but good)*NOTE: I used the seeds whole
  • 1 can petite dice tomatoes plus juice
  • 1/2 cup chicken stock (I used my homemade chicken stock)
  • 2/3 cup light sour cream
