Beef Vegetable Soup with Noodles

1. Pat meat dry with paper towels and season with salt and pepper
- 2 – 2 1/2 lbs. beef chuck, trimmed of excess fat, cut into bite-sized pieces
- 5 tablespoons olive oil
- 4 cups beef stock
- 1 cup chicken stock or water
- 1 teaspoons Worcestershire sauce
- 1 teaspoon soy sauce
- Salt and fresh ground black pepper to taste
- 1 medium onion, diced
- 3 carrots, peeled, and chopped into half-moon chunks
- 2 celery ribs, sliced to the thicker side
- 3 small red potatoes, unpeeled and cubed
- 1 teaspoon dried thyme
- 3/4 cup frozen peas, thawed (or substitute green beans or add both!)
- 1/3 cup frozen corn, thawed
- 6 oz. best quality egg noodles (from an Amish market if possible)

Sweat the onions in the oil with a three-fingered pinch of salt

- 1 large onion, diced
- 1 tablespoon canola oil
- salt to taste
- optional seasonings: black pepper, oregano, cumin, coriander, chopped garlic, hot smoked paprika, chilli powder—whatever you’re in the mood for (I just used black pepper, garlic and a tablespoon of fish sauce, which gives it depth)
- one 28-ounce can whole tomatoes, pureed in the can with a hand blender or in a blender blender
- 2 pounds lean ground beef
- 1 box macaroni
- 1 cup each grated cheddar and mozzarella cheeses

- Cheese tortellini (enough dry noodles for 4 servings)
- Tricolor spiral pasta (enough dry noodles for 4 servings)
- Bunch green onions, chopped
- Sliced black olives

- Mini pepperoni (or regular sliced pepperoni, cut into quarters)

Similar to Olive Garden This makes about 5 quarts
- SEASONS:
- 3 tablespoons olive oil
- 1 small onion - minced
- 1/2 cup zucchini - chopped
- 1/2 cup frozen green beans - 1 inch long (Italian if possible)
- 1/2 stalk celery - minced
- 1/2 cup carrots - shredded
- 4 cloves of garlic - minced
- 4 cups vegetable broth
- 2 cans (15 oz) kidney beans - drained
- 2 cans (15 oz) small white beans (cannellini) - drained
- 1 can (14 oz) tomatoes - diced, drained
- 3 cups hot water
- 4 cups fresh baby spinach
- 1/2 cup small shell pasta (any type small pasta - like Acini Di Pepe-careful not to use to much this sucks up a lot of liquid)
- 2 tablespoons minced parsley
- 1 1/2 teaspoons dried oregano
- 1 1/2 teaspoons salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon dried basil
- 1/4 teaspoon dried thyme
- 1/2 cup red wine

- 2 6-7 oz. cans of tuna (drained)
- 1/2 C. mayonnaise
- 1 C. sliced celery
