Pressure Cooker Beef Stew

You can't go wrong with making a big pot of healthy and hearty beef stew for everyone in the family to enjoy
- 2 pounds beef (stew meat, chuck roast, or other cut), cut into 1-inch cubes
- 3 tablespoons olive oil (extra-virgin, or lard, or vegetable oil)
- 1/2 cup flour
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 2 cups water with beef base or bullion, or 2 cups beef stock
- 1/2 teaspoon paprika
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon thyme
- 1 bay leaf
- 1 cup onions, minced
- 1 garlic clove, minced or pre-prepared
- 6 carrots (about 2 cups), cut into 1-inch pieces
- 4 large potatoes (about 3 cups), cut into 1-inch pieces
- 1 cup peas, or celery cut into 3/4-inch pieces
Grandpa's Sauerkraut and Kielbasa

I grew up asking for sauerkraut instead of candy as a child, and my grandfather always made it for me
- 1/2 cup butter
- 1 medium onion, diced
- 2 garlic cloves, minced (four if you are a garlic lover)
- 1/2 teaspoon thyme leaves
- 1/4 teaspoon ground sage
- Ground black pepper, to taste
- 3 potatoes, peeled and diced (try to use a waxy potato like Yukon gold (russets will disintegrate in the baking process)
- 1 (16 ounce) bag sauerkraut, from the deli aisle (not canned please)
- 1 pound beef kielbasa, cut into 1/2 inch pieces (two if you're an insane sausage lover)

- 1 tablespoon tomato paste

- 1 1/4 cups Guinness Draught, divided
- 1 1/2 tablespoons brown sugar

- 1/4 - 1/2 cup brown sugar (last time used 1/2 C - a little too sweet)
- 1/4 cup soy sauce

BBQ Beef & Bean Cornbread Casserole

Soak beans overnight and cook until done
- For the homemade barbecue sauce:
- 1 1/2 c. ketchup
- 1/2 c. brown sugar
- 1/4 c. Worcestershire sauce
- 2 T. honey
- 2 t. salt
- 1 t. cumin
- 1 t. chili powder
- 1/2 t. allspice
- 1/2 t. crushed red pepper flakes
- 1/2 t. pepper
- Combine all BBQ sauce ingredients in a small bowl and set aside.
- For the beef and bean combination:
- 1/2 lb. dried beans (any kind, I usually use pinto or kidney)
- 1/2 – 1 lb. ground beef
- 1 onion, diced
- salt and pepper to taste
- optional: 1/2 diced green pepper, 1 diced celery stalk, 1 shredded carrot
- 2 c. barbecue sauce (homemade or from a bottle)
- For the cornbread:
- 3/4 c. corn meal
- 1 1/4 c. flour
- 1/4 c. sugar
- 2 t. baking powder
- 1/2 t. salt
- 1 c. milk
- 1 egg, beaten
- 1/2 c. vegetable oil, melted butter, or meat drippings

- 4 turkey wings
- 4 ribs celery, (use leaves too)
- 1 onion, cut into chunks
- 4 cloves garlic, smashed
- 8 cups water
- 10 peppercorns
- 2 bay leaves
- 6 tablespoons unsalted butter
- 6 tablespoons all-purpose flour
- 2 1/2 cups turkey stock, strained with fat skimmed

- 4 cups water
- 2 (6 ounce) cans chicken stock (can substitute beef stock)
