- For the crust:
- 1 stick or 1/2 cup cold butter
- 1 1/2 cups unbleached all-purpose flour (I use King Arthur Brand)
- 3 tablespoons sugar
- 1/4 teaspoon sea salt
- 3-4 tablespoons ice water
- For the filling:
- 1 cup ricotta
- 2 egg yolks
- 1 teaspoon vanilla
- 3 tablespoons sugar
- 1 Tablespoon orange zest
- For the fruit:

- 4 hamburger buns, toasted and buttered (I prefer brioche burger buns)
