- Scant 1/4 teaspoon salt

- 1 stick (1/2-cup) unsalted butter, softened
- 1/2 cup sugar
- 1/2 cup light brown sugar, packed
- 1 extra-large egg
- 1/2 teaspoon vanilla extract
- 1 cup sweetened flaked coconut*, lightly packed
- 1/4 cup ground pecans (I used a nut grinder)

- COCONUT CREAM:
- 1 can coconut milk
- Half-and-half or heavy cream (enough to add to the coconut milk to make 3 cups)
- 3 egg yolks

- 1/3 cup cornstarch
- 1/4 teaspoon salt
- 1 cup flaked coconut, toasted*
- 1 teaspoon vanilla extract
- 1 teaspoon coconut extract
