Avocado Hummus

Hummus gets even healthier adding a medium avocado
- 1 (15-ounce) can chickpeas. or garbanzo beans, drained & rinsed
- 1 medium avocado, pitted
- 1 garlic clove
- 2 tablespoons lemon juice
- 1/2 teaspoon Kosher salt
- 1/4 cup olive oil
- 1 tablespoon tahini
Maple Vinaigrette

Blend in a high-power blender until smooth
- 3/4 cup grapeseed oil
- 3/4 cup red wine vinegar
- 1/4 cup maple syrup
- 1/2 teaspoon sea salt
- 1/4 cup brown mustard
- 1/4 white onion or sweet onion
- 1/2 teaspoon garlic powder
Blueberry Oatmeal Anytime Bars

- 2 cups flour
- 1 t baking soda
- 1/2 t salt
- 1 t cinnamon
- 1 cup butter, softened
- 3/4 cup sugar
- 3/4 cup brown sugar
- 1 t vanilla
- 2 eggs
- 2 1/4 cups quick oats
- 1 1/2 cups whole dried blueberries
- 1/2 cup chopped walnuts
Perfect Poultry Rub

Combine. Makes about 3 T, enough to season 4 lb whole chicken or 8 bone in or boneless breasts
- 1 t kosher salt or 1/2 t table salt or to taste
- 1 t freshly ground black pepper
- 2 t smoked paprika
- 1 t garlic powder
- 1 t ground coriander
- 1/2 t ground cumin
- 1/4 t ground cayenne (optional)

Vegetable Chili

Heat oil in a large heavy pot over medium high heat
- 3 tablespoons olive oil
- 1 large onion, coarsely chopped
- 6 cloves garlic, chopped
- 4 -14.5 cans diced tomatoes in juice
- 1 - 4 ounce can diced green chilies
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 3 tablespoons chili powder
- 1 - 15.5 ounce can dark red kidney bean, drained
- 1 - 15 ounce can black beans, drained
- 1 - 15.5 ounce can Lima (butter beans), drained
- 1 green bell pepper cut into 1/2-inch pieces
- 1 yellow bell pepper cut into 1/2-inch pieces
- 1 - 10 ounce package frozen corn kernels
- Salt, pepper and hot sauce

Paleo and gluten free pumpkin muffins are quick and easy to make
- 3/4 cup coconut flour
- 1/2 cup pumpkin puree, canned or homemade
- 3/4 cup maple syrup
- 6 eggs
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon apple cider vinegar, or lemon juice
- Chocolate chips, raisins, or walnuts, optional
