Taco Meat Recipe

Love this recipe! I put beef, onion, green pepper if I have it
- 1 lb. ground beef (or veal or chicken)
- 2 Tbsp beef tallow or homemade ghee
- 1/2 onion, chopped
- 1 carrot, diced
- 2 Tbsp homemade taco seasoning
- 1/4 cup homemade ketchup
Coconut-Lemon-Garlic Cauliflower

- 1 medium head of cauliflower (i.e. a whole one)
- 1 cup of full-fat coconut milk
- 1/2 cup of chicken stock or water
- 1-2 tablespoons of freshly squeezed lemon juice (the original recipe called for lime juice which I didn't have so I used lemon juice and it resulted in a great taste)
- 6 large garlic cloves, crushed (the original recipe called for 2, I love garlic so added more!)
- 1 teaspoon powdered ginger spice (the original recipe called for 1-2 teaspoons grated fresh ginger - I didn't have any on hand but will try it with this next time)
- 1/2 teaspoon sea salt
- Garnishes: sliced green onions and chopped cilantro
Spanish Eggplant

Substitute cauliflower rice in this wonderfully cheesy eggplant for a lower carb version!
- 1 medium eggplant
- 1/2 cup rice, cooked
- 1 cup tomatoes, chopped
- 1/4 cup peppers, chopped
- 1/4 cup onion, chopped
- 1/2 teaspoon salt
- 1/2 cup mozzarella cheese, grated
- 2 tablespoons butter
- 1 cup soft breadcrumbs
Feel Better Vegetable Soup

From Rita Heikenfeld. This recipe is meant to be a guide
- Some type of oil to film bottom of pan
- 3 cups butternut or acorn squash or pumpkin
- 2 nice sized carrots, sliced
- 2 cups onion
- 1 generous teaspoon garlic or more to taste
- 1/4 teaspoon ground allspice
- 1/2 teaspoon dried thyme
- 4 cups or more of broth, chicken, vegetable, or your choice
- 1 14.5 ounce can of diced tomatoes
- Couple handfuls of fresh chard, spinach, kale or mixed salad greens
- 1 15 ounce can drained and rinsed chickpeas or favorite beans
- Salt and pepper to taste
- For garnish: Romano or Parmesan cheese, shredded
Roasted Sweet Potatoes with Thyme

Preheat the oven to 450 degrees F
- 2 medium sweet potatoes, peeled and cut into 1-inch pieces
- 2 tablespoons olive oil
- 2 cloves of garlic, peeled and slightly crushed
- 1 teaspoon fresh thyme leaves (3-4 sprigs)
- 1/2 teaspoon salt
- 1/4 teaspoon red pepper flakes
Basil Dressing

- 4 cups fresh basil leaves (no stems)
- 1 clove garlic, chopped
- 2/3 cup apple cider vinegar
- 1/4 cup sugar
- 1 t salt
- 1 cup olive oil
Warm Weather Salad Dressing

- 1 part Balsamic vinegar
- 2 parts Grapeseed or favorite oil
- Squirt of Dijon mustard
- Couple grindings of fresh black pepper
- Few snips of your favorite herb
Mango and Black Bean Quinoa Salad

1. Add the qunioa and the chicken broth to a medium sized pan
- 1 C quinoa
- 3/4 c chicken broth, veggie broth, or water
- 1 large mango diced
- 1 red bell pepper chopped or 2 ears of fresh corn, corn cut off the cob
- 6 green onions sliced
- 1/2 C cilantro
- 3 T red wine vinegar
- 1 T olive oil
- Juice of 1 lime
- salt to taste (if you use chicken broth it doesn’t need any)
- 1 can of black beans, rinsed and drained
- 1 package of mixed baby greens
Marinated Bocconcini

I got this recipe from Christy Elias and made it for Anupama's shower
- 1 lb fresh mozzarella cheese, preferably the small balls
- 1 cup extra virgin olive oil
- 2 t dried oregano
- 1 clove garlic, minced
- 1 t salt
- 1/2 t freshly ground black pepper
- 1 container small, sweet cherry tomatoes
- basil leaves
- balsamic vinegar for drizzle
