From Joy Bauer...It’s hard to resist the scent of freshly baked Cinnabons
- 1/2 cup whole wheat flour
- 1/2 cup all-purpose flour
- 3/4 tsp baking soda
- 1/4 tsp kosher salt
- 1 Tablespoon ground cinnamon
- 3 egg whites
- 3/4 cup canned 100% pumpkin puree
- 3/4 cup nonfat plain yogurt
- 2 Tablespoons packed brown sugar
- 2 teaspoons vanilla extract
- Icing: 4 ounces reduced-fat cream cheese (at room temp) + 1/4 cup pure maple syrup
- Optional Garnish: 1/4 cup pecans, toasted and roughly chopped, ground cinnamon.

Drain and rinse the cashews
- 1 1/2 cups cashews, soaked
- 2/3 cup agave nectar, or 3/4 cup maple syrup
- 1/2 cup coconut oil
- 1/3 cup cocoa powder
- 1/3 cup dark chocolate chips, melted
- 2 teaspoons pure vanilla extract
- 1/2 teaspoon fine-grain sea salt
- 1/2 teaspoon espresso powder (optional)
Basic Quinoa (Soaked)

- 2 2 2 cups of quinoa
- 2 2 2 cups of warm filtered water
- 2 2 2 tablespoons of yogurt, whey, kefir, kombucha, raw apple cider, etc
- 2 2 2 cups of filtered water
- 1 1 1 teaspoon unrefined salt
- 2 2 to . When you are ready to cook the quinoa, strain the quinoa in a fine sieve and rinse well, until the water runs clear. Make sure you thoroughly rinse the quinoa, otherwise it can be bitter.
- 3 3 to to to 12-15 5 medium pot with the last two cups of water and salt. Bring to a boil, turn down to low, cover, and cook for about 12-15 minutes. Let cool for 5 minutes. Serve.

- 1 pound ground beef
- 2 medium onions, diced
- 2 cans kidney beans (15.5 ounce)
- 2 cans diced tomatoes (14.5 ounce)
- 1 can condensed tomato soup (10.5 ounce)
- 1/3 cup flour
- 2 T sugar
- 2 t chili powder
- 1/2 t salt
- 1/2 soup can water
Beef Broccoli Lo Mein with Flank Steak

This beef broccoli lo mein recipe is an excellent way to use up flank steak or round steak
- 1 cup beef broth
- 3 tablespoons soy sauce
- 3 tablespoons ketchup
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch (or arrowroot powder)
- 1/4 teaspoon red pepper flakes
- 1 large head broccoli, cut into florets
- 1/2 pound whole grain spaghetti or linguine
- 2 tablespoons healthy cooking fat or ghee
- 1/2 pound flank steak cut into thin slices (1/4 inch or less)
- 1 large green bell pepper, cored, seeded and thinly sliced
- 1 (8-ounce) can water chestnuts

Traditional Directions Preheat oven to 425°F
- 1-pound wild mushrooms (Crimini, lobster, chanterelle, elf's ear, or hedgehog mushrooms all work really well. Be creative!)
- 3 carrots cut into 1/2-inch strips
- 3 parsnips cut into 1/2-inch strips
- 4 turnips cut into 1/2-inch strips
- 4 Yukon Gold potatoes cut into 1/2-inch strips
- 2 rutabagas cut into 1/2-inch strips
- Sea or Kosher salt
- Black pepper
- Marinade
- 1/4 cup olive oil
- Juice of 1/2 lemon
- 2 tablespoons soy sauce
- 1 tablespoon cracked black pepper
- 2 sprigs rosemary, chopped
- 3 tablespoons parsley, chopped
- 1 tablespoon brown sugar
- Rosemary sprigs (garnish)

- 3 chicken breasts, cooked and chopped
- 1 90z pkg frozen white corn
- 2 15 oz. cans Great Northern beans, undrained
- 1 7 0z. can diced green chilies
- 1/2 t. cumin
- 1/2 t. coriander
- 1/2 t. oregano
- 1/4 t. cayenne pepper (optional)
- 3 c. chicken broth
- 3 T. lime juice
- Desired taco toppings (lettuce, fat free sour cream, fat free cheese, salsa, olives, tomatoes, avacados, green onion, cilantro, etc.)
