  • 1/2 cup all-purpose flour
  • 3/4 tsp baking soda
  • 1/4 tsp kosher salt
  • 1 Tablespoon ground cinnamon
  • 3 egg whites
  • 3/4 cup canned 100% pumpkin puree
  • 3/4 cup nonfat plain yogurt
  • 2 Tablespoons packed brown sugar
  • 2 teaspoons vanilla extract
  • Icing: 4 ounces reduced-fat cream cheese (at room temp) + 1/4 cup pure maple syrup
  • Optional Garnish: 1/4 cup pecans, toasted and roughly chopped, ground cinnamon.

  • 2 2 to . When you are ready to cook the quinoa, strain the quinoa in a fine sieve and rinse well, until the water runs clear. Make sure you thoroughly rinse the quinoa, otherwise it can be bitter.
