Honey Dijon Dressing

From Detoxinista! This dressing can be made with honey or dates, and both versions are delicious
- 1/4 cup stone-ground or Dijon mustard
- 2 Tablespoons apple cider vinegar
- 2 Tablespoons extra-virgin olive oil
- 1 clove garlic
- 1 tablespoon minced ginger (about 1-inch, peeled)
- 2 Tablespoons honey*
- 1/4 teaspoon fine sea salt
- 1/4 cup water, or more for thinning

- 1 can (15 ounces) low-sodium black beans, drained and rinsed
- 1 cup frozen corn
- 1 cup chopped bell pepper (any color)
- 1 can (14 1/2 ounces) diced tomatoes
- 1/4 cup chopped cilantro
- 2 scallions (chopped)
- 1 tablespoon taco seasoning
- 1 1/2 pounds boneless, skinless chicken breasts

- Modifications:
- 1/2 cup almond flour
- 1/2 cup coconut flour
- 1-2 scoops vanilla protein powder
- 1 t baking powder
- 2-3 eggs
- ~1/2 cups unsweetened coconut milk (start with 1/4 cup and add more if needed. Batter should be thicker than normal pancake batter)
- 1 T arrowroot powder can be added for thickening/binding
- 1 t vanilla and/or cinnamon can be added to make more delectable
- 1 T butter/coconut oil makes them richer
- 1-2 T cocoa powder can be added for chocolate pancakes
- Stevia can be added for sweetness

This is a great recipe! I got it from Kelly Winters of Primally Inspired
- 1 roast (I used a sirloin tip roast, but any type roast will work)
- 3 cups beef or chicken stock
- 1/2 cup balsamic vinegar
- 2 onions, diced
- 16 ounces mushrooms, roughly chopped
- 6 cloves garlic, minced
- 1 t garlic powder
- 1 t onion powder
- 1 t paprika
- Salt and pepper to taste
