Chicken Noodle Soup with Parsnips

- 1 large onion diced
- 2 tablespoon oil, olive
- 2 large carrots peeled and diced
- 3 parsnips peeled and diced
- 3 stalks celery diced
- 3 cloves garlic minced
- 1 sprigs thyme (may substitute 1/2 teaspoon dried thyme)
- 1 bay leaf
- 1 pinch crushed red pepper (optional)
- 3 cups egg noodles, whole wheat (such as Ronzoni Healthy Harvest)
- black ground pepper, to taste
- 2 tablespoons parsley chopped (optional)
- 2 quarts broth, chicken, less sodium
- 2 cups chicken breast (cooked) skinless, diced
Strawberry Smoothie

Blend all ingredients together until mixture is frothy and no big chunks remain, approx
- 6 frozen or fresh strawberries
- 1 cup orange juice
- 1/2 cup plain, vanilla, or berry yogurt
- 6 ice cubes
- 1 banana, peeled and cut into chunks
Simple Green Smoothie

Blend spinach and water to make green juice
- 2 cups spinach (packed)
- 2 cups water
- 1 cup frozen mango
- 1 cup pineapple
- 2 bananas
Soy Ginger Glazed Salmon

Glaze for making salmon. Similar to teriyaki sauce
- Glaze
- 1 cup soy sauce
- Juice and zest of 2 oranges
- 3 T honey
- 1 T sugar
- 1/4 c chopped green onions
- Salmon
- 6-8 oz fillet per person
Rosemary Chicken

- 1 tablespoon olive oil
- 2 teaspoons fresh rosemary, minced
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 1 teaspoon coriander, ground (optional)
- 1/2 teaspoon pepper, black ground
- 4 chicken, cutlet skinless, pounded to 1/8 “ thick (6 ounces each)
- Kosher salt
Guacamole Recipe

- 3 avocados, peeled and mashed
- 1 jalapeno pepper, seeded and finely chopped
- 1 cup fresh cilantro, chopped
- 2 tablespoons red onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh limejuice
- Salt and pepper to taste
Hoisin-Glazed Salmon

- 1 cup plain yogurt
- 1 cup packed fresh basil leaves, chopped
- 1/4 cup chopped red onion
- 1/2 teaspoon curry powder
- Salt and freshly ground pepper
- 2 pounds boneless, skinless chicken thighs, trimmed of excess fat and cut into 1 1/2-inch pieces
- 1 yellow bell pepper, stemmed, seeded, and cut into 1-inch squares
- 1 large zucchini, quartered lengthwise, then cut into 1-inch pieces
- 1 pint (12 ounces) large cherry tomatoes
