  • 2 large carrots peeled and diced
  • 3 parsnips peeled and diced
  • 3 stalks celery diced
  • 3 cloves garlic minced
  • 1 sprigs thyme (may substitute 1/2 teaspoon dried thyme)
  • 1 bay leaf
  • 1 pinch crushed red pepper (optional)
  • 3 cups egg noodles, whole wheat (such as Ronzoni Healthy Harvest)
  • black ground pepper, to taste
  • 2 tablespoons parsley chopped (optional)
  • 2 quarts broth, chicken, less sodium
  • 2 cups chicken breast (cooked) skinless, diced
