Tuna Hummus Crostini

- 1 thin baguette
- 1/4 cup olive oil
- 2 cans Genova Tonno Solid Light Tuna in Olive Oil
- 2 tbsp chopped fresh basil plus 1/4 cup chiffonade fresh basil leaves (optional garnish)
- 1 tbsp freshly squeezed lemon juice, or more to taste
- salt and freshly ground black pepper, to taste
- 1 cup hummus
- 1/3 cup pesto
Roasted Sweet Potato Wedges

This recipe is from my sister, Lorraine
- 2 pounds sweet potatoes, peeled and cut lengthwise into 1/2 inch wedges
- 1 tablespoon extra virgin olive oil (I would use palm oil instead)
- 1 teaspoon kosher salt
- 1 teaspoon sugar
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon ground cumin
- 1/4 teaspoon Paprika
Easy Peasy Crockpot Chili

Made this at the lake when whole family was there for a few days over Christmas break 2015
- 1 lb ground beef (or buffalo, or turkey)
- 1 large onion, peeled and diced
- 2 red bell peppers, seeded and diced
- 1 green bell pepper, seeded and diced
- 1 habanero pepper (or jalapeno), seeded and diced (optional)
- 2 stalks celery, diced
- 1 1/2 T chili powder
- 2 t ground cumin
- 1 1/2 t sea salt
- 1 T fresh oregano, minced or 1 t dried oregano
- 1 15-oz can diced tomatoes
- 1 8-oz can tomato sauce (optional)
- 1 cup pumpkin puree (optional)
- 1 15-oz can kidney beans, rinsed and drained
- 1 15-oz can pinto beans, rinsed and drained
- 1/2 c shredded cheddar cheese
- Sour Cream (optional)

- 1/2 cup dried cranberries
- 1/2 cup seedless grapes, quartered

- 1/4 cup mayonnaise

Roasted Red Pepper Soup

From Carol. I made this in February of 2014
- 4 T grapeseed oil
- 6 large red peppers, large chop
- 2 pears, skin on, large chop
- 2 large carrots, skin on, large chop
- 2 small or 1 large shallot, chopped (I used an onion)
- 1 1/2 32 oz box organic salt free chicken broth (I used regular and it was fine)
- 1 t salt
- 1/2 t red pepper flakes
- 1 T sugar
- 1 t tarragon (can use marjoram or basil, I used marjoram)
Grain-Free Chocolate Almond Crackles

Start off by combining the dry ingredients in a bowl and set aside
- 4 cups almond flour
- 1 5/8 tsp baking powder
- 1/4 cup coconut flour
- 2 squares unsweetened chocolate
- 1 cup maple syrup
- 1/4 cup butter
- 2 T vanilla
- 1 egg
- Icing sugar (powdered sugar, optional)
The Ultimate Healthy Brownie

Preheat the oven to 350°F
- olive oil cooking spray
- 2/3 cup mild honey, such as clover or orange blossom
- 1/3 cups natural, unsweetened cocoa powder
- 1/2 cup white whole-wheat flour
- 1/4 teaspoon aluminum-free baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsweetened applesauce
- 2 tablespoons olive oil
- 1 large egg, at room temperature
- 3/4 teaspoon pure vanilla extract

- Salad:
- 1 pound cabbage, less thin like coleslaw
- 8 ounces extra red cabbage, cut up like slaw, may not need all
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 small red or sweet onion, chopped
- 1 red, orange or yellow bell pepper, chopped
- 2 carrots, grated
- 2 nice sized oranges, peeled and cut up
- Dressing:
- 1/2 cup clear vinegar
- 1/3 cup sugar, may need a bit more to taste
- 1/4 cup vegetable oil (I use avocado oil)
- 1/4 cup orange juice
