White Chicken Chili

1. In a soup pot saute onion, green pepper, and jalapeno until soft
- 1-2 Tbs. oil, extra virgin olive or coconut
- 1 medium onion, chopped
- 1 green pepper, chopped
- 1 jalapeno pepper, chopped
- 3 cloves garlic, minced
- 1 tsp. cumin
- 1/2 tsp. chili powder
- 1/2 tsp. oregano
- 1/2 tsp salt
- 2 c. cooked, shredded chicken
- 2 cans white beans, drained and rinsed, or 4 c. cooked beans
- 2 c. chicken stock or broth
- 1 pint (15 oz. can) diced tomatoes with juice
- 8 oz. Monterey Jack cheese, cubed or shredded

- 4 1/2 cups powdered sugar (remove lumps by sifting if necessary)

- Loaves:
- 1 1/2 lbs ground beef
- 1 egg slightly beaten
- 1/4 cup onion, chopped
- 1/4 cup lemon juice
- 1/2 cup bread crumbs
- 2 t seasoned salt
- Sauce:
- 1/2 cup ketchup
- 1/2 cup brown sugar
- 1 t dry mustard
- 1/4 t allspice
Barb's Smoothie Recipe

Combine all ingredients in high speed blender
- 1 cup coconut water
- 2 spoons full flax seeds
- 6 chunks frozen pineapple
- 1/2-1 cup frozen raspberries
- 1-2 handfuls greens (kale, spinach, chard)
- 2 nickel size chunks of frozen red beets (for color)
- 1-2 t honey
- Ice, optional
- Ginger, optional
Best Blueberry Muffins

- 4 tablespoons unsalted butter, room temperature
- 1 cup sugar
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 2 teaspoons baking powder
- couple dashes salt
- 2 cups all-purpose flour (whisk before measuring to lighten up and then scoop into measuring cup, level off with knife)
- 2 generous cups fresh blueberries or equivalent frozen, not thawed, no sugar added cost with flour used in recipe
- 1/2 cup milk
Gluten Free Corn Muffins

- 1 cup Gluten-free all-purpose flour blend (see below)
- 1 cup cornmeal
- 1/2 cup sugar
- 1 1/2 tsp baking powder
- 1 tsp salt
- 1/2 tsp xanthan gum
- 1 cup buttermilk
- 1/4 cup butter, melted
- 2 eggs
- Gluten-free all-purpose flour blend
- 1 cup white rice flour
- 1 cup sorghum flour
- 1 cup tapioca flour
- 1 cup cornstarch
- 1 cup almond flour or coconut flour
- Combine all ingredients in a large bowl. Whisk to make sure the flours are evenly distributed. The recipe can be doubled or tripled. Store in an airtight container in the refrigerator.

- 1 can corn (11 oz.)
- 1 cup chopped fresh cilantro
- 1/2 c. chopped red onion
- 3 tomatoes, chopped
- 1 jalapeno pepper, seeded, finely chopped
- 1 red bell pepper, chopped
- 2 tsp. minced garlic
- 1 can black beans (15 oz.) drained and rinsed
- 2 lg. avacados, peeled and cut into 1/2 inch pieces
- 1 T. salt
- 3/4 t. cumin
- 6 T. fresh lime juice
- 2 T. oil
- 2 T. cider vinegar
Blueberry Muffins (with lemon)

Adapted from recipe by Ina Garten
- 3 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 4 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 2 cups buttermilk, shaken *
- 2 teaspoons vanilla (not in original recipe)
- 1/4 pound (1 stick) unsalted butter, melted and cooled
- 1 1/2 teaspoons grated lemon zest (I used more, probably closer to 2+)
- 2 extra-large eggs, lightly beaten
- 2 cups fresh blueberries (next time, I would increase this to 2 1/2 - 3)
- I make my own buttermilk: put 2 T lemon juice in measuring cup, add milk to 2 cup line and let sit to thicken.
