- 1.5 pounds skinless chicken breasts, cut into 2-inch chunks
- 1/4 teaspoon Kosher salt
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced (or 1/4 teaspoon garlic powder)
- 1 teaspoon turmeric
- 1 teaspoon fresh minced ginger
- 3 tablespoons curry powder
- 1 head cauliflower, cut into florets
- 1 fifteen-ounce can no-salt-added garbanzo beans (chickpeas), rinsed and drained
- 2 fifteen-ounce cans no-salt-added diced tomatoes
- 1 cup fat-free plain yogurt
- 2 tablespoons chopped cilantro (garnish)

- 4 chicken breasts
- 4 ounces Portabella mushroom slices
- 1 red or yellow pepper, cored, quartered
- 1 medium zucchini, halved
- 1 medium onion, halved
- 1/4 cup olive oil
- 2 tablespoons basalmic vinegar
- 1 tablespoon sugar
- 2 garlic cloves, minced
- 1/2 teaspoon each: dried oregano and rosemary leaves, crushed
- 1/4 teaspoon each: black pepper and salt
- 1 1/2 cups tomato, chopped
- 8 ounces angel hair pasta, cook and drained
Carrot Cake No Bake Cookie Balls

Update #2: Used my small Black and Decker chopper to chop up the walnuts fine
- 1 1/2 C rolled oats
- 3/4 C grated carrot (grate it using a fine shredder)
- 1/4 C raisins (I chopped fine so the raisins would be better dispersed)
- 3 Tbsp honey
- 1/2 C nut butter (I used cashew butter, but a flavored butter would be good too)
- 1/4 C chopped walnuts (chop them small)
- 2 Tbsp unsweetened coconut
- 1 Tbsp mini chocolate chips
- 1 Tbsp chia seeds
- 1/2 cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1 Tbsp brown sugar or coconut sugar (optional - I used it)
Steak Rub

Stir all ingredients together and store in an airtight container or empty seasoning bottle
- 1/2 cup brown sugar
- 1/2 t ground chipotle powder
- 1/2 t smoked paprika
- 1/4 t ground mustard
- 1 t kosher salt
- 1/2 t black pepper
- 1/4 t onion powder
- 1/2 t ground cinnamon

- 2-3 1/2 lbs. beef tenderloin
- 1 1/2 t salt
- 1/4 t pepper
- 1/4 lb bacon or salt pork (didn't use)
Stahl's Morning Fruit Smoothie

We keep adding more healthiness to our morning smoothie
- Then add:
- 1 orange
- 6 ounces coconut water
- 1 T chia seeds
- 1/2-1 t vanilla
- Small slice of lemon (if organic, peel included!)
- 4 frozen chunks of red beets (relatively small, great for color)
- 3 handfuls of power greens (a blend of spinach, kale, and chard)
- 6 T plain yogurt (Greek or regular)
- Blend until smooth in a high speed blender, like a vitamix.
- 1/2 frozen banana
- 4-5 chunks frozen mango
- 4-5 chunks frozen pineapple
- 1 cup of frozen berries (any combination of raspberries, blueberries, and/or strawberries)
- 1 cup ice

Preheat oven to 350. Place chicken in roasting pan and season generously inside and out with salt and pepper
- 1 , 3 lb whole chicken, giblets removed
- Salt and black pepper to taste
- 2 T paprika, divided
- 2 T dried herbs de Provence (or mix of dried oregano and basil)
- 1/2 cup butter, divided
- 1 stalk celery, leaves removed
