Shredded Zucchini and Black Bean Salad

In a medium sized bowl combine the zucchini, onion, tomato and garlic
- 2 zucchini – shredded with skin
- 1 vine ripe tomato – diced
- 1/2 red onion – sliced thin
- 15 oz. can of black beans – drained and rinsed
- 1 clove of garlic – chopped fine
- 1 tsp. dried oregano
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. red pepper flakes
- Juice of 1/2 lemon
- 4 tbs. olive oil
Sweet and Savory Spinach Crepes

For the Crepe: Sift the flour with the sugar and salt
- For the Crepe:
- 1 cup flour – sifted
- 2 eggs
- 1/2 cup milk
- 1/2 cup water
- 1/4 tsp. salt
- 2 tbs. Butter – melted
- 1 tbs. sugar
- Sour cream
- Honey - for drizzling
- Powdered sugar - for dusting
- Butter for cooking the crepes
- For the Filling:
- 16 oz. box of frozen creamed spinach
- 1 medium to large apple – peeled and diced
- 1/4 cup of pitted dates – chopped
- 1/4 cup of raisins – chopped
- 1 cup of instant barley
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/4 tsp. red pepper flakes
- 1/2 tsp. curry powder
- 1 tbs. of butter
Iberia Rice with Eggs

Prepare the rice as directed
- 2 cups uncooked Iberia Rice
- 1/4 cup Iberia Olives – sliced
- 1 tsp. Iberia Hot Sauce
- 9 oz. box of frozen spinach – thawed
- 1 cup tomato sauce
- 2 tablespoons olive oil
- 2 eggs
- Leftover potato wedges
- Your favorite breakfast toast
- Grated Romano or Parmesan cheese for the rice - if desired
Chicken Salad with Fresh Salad Greens & Warm Naan

For the Chicken Salad: Combine all of the above in a bowl; toss and refrigerate
- For the Chicken Salad:
- 2 – 3 cups of cubed chicken breast
- 15 oz. can chickpeas – drained and rinsed
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 2 stalks celery – diced
- 1/2 red onion – diced
- !For the Dressing for the Chicken Salad:
- 1/2 - 3/4 cup sour cream
- Juice of l lemon
- 2 tbs. fresh dill
- 2 tbs. balsamic vinegar
- For the Fresh Greens Salad:
- 1 head of romaine – ripped
- 1/2 red onion – diced
- 1 cucumber – sliced
- Radishes – sliced thin
- 1/4 cup fresh Italian parsley – chopped
- 1 tomato – diced
- A handful of olives of your choice
- Several shavings of Asiago cheese
- Dressing for the Salad:
- 1/4 cup olive oil
- 2 tbs. white vinegar
- 2 tbs. balsamic vinegar
- 1/4 tsp. salt
- 1/4 tsp. black pepper

- 4 pounds ground beef
- 2 tablespoons Worcestershire Sauce
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon garlic powder
- 1/2 cup milk
- 1 cup oats
- 2 eggs
- STUFFING:
- 10 ounces frozen chopped spinach, thawed
- 3 cloves garlic, minced
- 3 sun dried tomatoes, sliced
- 1/2 cup marinated peppers, sliced thin
- 4 ounces mozzarella cheese, shredded
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- GLAZE:
- 2 tablespoons honey
- 2 tablespoons Worcestershire Sauce
- 2 tablespoons ketchup
Roasted Stuffed Peppers

- 7 Peppers – these can be any pepper type of you choose.
- 1 bunch of Italian parsley
- Healthy handful of fresh basil
- 6-7 garlic cloves
- 1 tablespoon of pimento olives
- 1 tablespoon of sun dried tomatoes
- 2 oz. can of anchovies in olive oil
- 1/2 cup Parmesan cheese
- Drizzles of olive oil
- 1 cup of grated Monterey Jack cheese
Chicken Breast with Fresh Spinach

- 2 1/2 lbs. boneless chicken breast
- 1 bunch fresh baby spinach
- 4 cloves garlic – crushed & chopped
- 2 tablespoons Worcestershire sauce
- 2 tablespoons Teriyaki sauce
- 2 tablespoons Soy sauce
- Juice of 1/2 lemon

- Dash of garlic powder
