Easy and Light Chicken Salad with Fresh Salad Greens

For the Chicken Combine all of the above in a bowl; toss and refrigerate
- For the Chicken
- 2 – 3 cups of cubed chicken breast
- 15 oz. can chickpeas – drained and rinsed
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 2 stalks celery – diced
- 1/2 red onion – diced
- For the Chicken Dressing
- 1/2 - 3/4 cup sour cream
- Juice of l lemon
- 2 tbs. fresh dill
- 2 tbs. balsamic vinegar
- For the Salad
- 1 head of romaine – ripped
- 1/2 red onion – diced
- 1 cucumber – sliced
- Radishes – sliced thin
- 1/4 cup fresh Italian parsley – chopped
- 1 tomato – diced
- For the Salad Dressing
- 1/4 cup olive oil
- 2 tbs. white vinegar
- 2 tbs. balsamic vinegar
- 1/4 tsp. salt
- 1/4 tsp. black pepper

Thin Crisp Chocolate Chip Cookies

- 1/2 teaspoon vanilla extract
- 1/2 cup dark chocolate chips
Fettuccini with Beans & Broccoli

- 1 box of fettuccini
- 1- 29oz. can of cannelloni beans - drained
- 1 quart of button mushrooms – sliced
- 4 cloves of garlic – crushed & chopped
- 1 small handful of sun-dried tomatoes – sliced
- 1 head of broccoli – steamed or gently boiled
- ½ cup of chicken broth
- Dashes of red pepper flakes
- Dashes of black pepper
- Romano Cheese for grating
- Olive oil
Spinach and Blue Cheese Ravioli

This is a delicious treat
- For the Ravioli Dough:
- 2 cups flour – sifted
- 3 egg yolks
- 1/4 tsp. salt
- Warm water
- For the Ravioli Filling:
- 10 oz. box of frozen chopped spinach
- 1 small onion - chopped
- 3 cloves of garlic – chopped
- 6 oz. crumbled blue cheese
- 1/4 cup grated Romano cheese
- Zest of 1/2 lemon
- Dash of ground nutmeg
- Olive oil for drizzling
- For the Fennel and Tomato Sauce:
- 14 oz. of crushed tomatoes
- 1 onion – chopped
- 1 bulb of fresh fennel - sliced
- 1 cup of chicken broth
- 1 tablespoon of butter
- Dash of salt
- Dash of red pepper flakes
- Olive oil for drizzling
Sautéed Chicken Nuggets

This is a pleasing and fun meal
- Marinade:
- 2-3 lbs. boneless chicken cubed
- Juice of 2 lemons - plus the squeezed lemons
- 5 garlic cloves – chopped
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- Healthy handful of fresh parsley – chopped
- Healthy handful of fresh dill – chopped
- Olive oil – for drizzling
- For the Rice:
- 2 cups uncooked rice
- Add to the rice water while cooking:
- Dash of cinnamon
- Dash of turmeric
- Dash of dried curry
- Sautéed Onions and Peppers:
- 1 onion – sliced
- 1 pepper bell pepper– sliced
- Dashes of salt
- Dashes of pepper
- Refried Beans:
- 29 oz. can of beans – drained
- 1 jalapeño – sliced with seeds
- 1 onion – sliced
- 4 cloves of garlic – chopped
- Dashes of salt
- Dashes of ground cumin
- Dashes of paprika
- Water and lime juice
- Olive oil

- For Sweet Cream Cheese Frosting:
- 3-4 medium beet roots
- 1 cup sour milk or buttermilk
- 2 cups self-rising flour
- 2 tablespoons cornstarch
- 1/4 cup cocoa powder
- 1 3/4 cup white sugar
- 3 eggs
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 4 oz. cream cheese
- 2 cups confectioner's sugar
- 2-3 tablespoons evaporated milk
Quick and Easy Mac and Cheese

- 4 tablespoons butter
- 1/4 tsp. garlic powder

- 1 cup milk
- 5 tablespoons butter

- 1 cup 100% pure pumpkin

- 1 tsp. ground cinnamon
