Baked Peaches and Cream

For peaches: Preheat oven to 350 degrees F
- For peaches you will need:
- 5 ripe peaches, pitted
- 1 tablespoon honey
- 1 teaspoon mixed berry marmalade
- 2 tablespoons butter, cubed
- For ice cream you will need:
- 1 can sweetened, condensed milk
- A pinch of salt
- 1/2 teaspoon vanilla
- 1 cup heavy cream, whipped with a tablespoon of confectioners sugar
Zucchini Fritters

Shred the zucchini into a bowl and add the chopped onion
- 4 zucchini – shredded
- 3/4 tsp. salt
- 1/2 tsp. cumin
- 1/2 tsp. garlic powder
- 1/4 tsp. red pepper flakes
- 1/2 tsp. baking powder
- 1/2 cup flour
- 1/2 cup cornmeal
- 2 eggs
- 1/2 cup milk
- 1 small onion – chopped
- 1/4 cup chopped - Fresh Italian parsley
- 3 tablespoons of olive oil
Chicken Kebab

- 1 1/2 lbs. chicken breast – cut into 11/4 inch cubes
- 4 bay leaves
- 1 medium onion – to liquidize
- 1 green bell pepper – cut into 1 inch pieces
- 1 yellow onion – cut into 1 inch pieces
- 6 tablespoons olive oil
- Juice of 1/2 lemon
- 1/4 tsp black pepper
Greek Style Pork Burgers

This is a perfect picnic meal for any summer holiday!!
- 3 lbs. fresh pork loin - chopped
- Healthy handful of fresh basil - shredded
- 4 slices of marinated roasted red peppers – chopped -plus a tablespoon or two of the marinade
- 4 oz. feta cheese - crumbled
- Zest of 1 lemon
- Dashes of Dried oregano
- Dashes of red pepper flakes
- Dashes of black pepper
- Dashes of Garlic powder
- Dashes of celery powder
- Drizzle of olive oil
Vanilla Pineapple Cake

For the Pineapple: Place the pineapple in a bowl and add the flour and the cinnamon and toss
- For the Pineapple:
- 2 1/2 cups fresh pineapple – chopped
- 1/2 cup flour
- 1 tsp. cinnamon
- For the Cake:
- 2 cups flour
- 1 1/2 tsp. baking powder
- 2 eggs
- 1/4 tsp. salt
- 1/3 cup canola oil
- 1 cup sugar
- 1 tsp. Nielsen Massey Pure Vanilla Extract
- 1/2 cup milk
- For the Topping:
- 1 tsp. cinnamon
- 1 tsp. Madagascar Bourbon Pure Vanilla Powder Extract
- 1 1/2 tbs. butter
- 2 tbs. flour
- 1 tbs. brown sugar
Best-Ever Blueberry Muffins

- 11/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/4 cup sugar
- 4 tablespoons (1/2 stick butter) sweet butter
- (melted & cooled)
- 1 egg – beaten
- 3/4 cup plus 2 tablespoon milk
- 1 cup blueberries
Pulled Pork

- You will need:
- 8 lb. whole pork shoulder
- 1 tablespoon black pepper
- 2 tablespoons chili powder
- 1 tablespoon garlic powder
- 1 tablespoon paprika
- 1 tsp ground cumin
- 12 ounces good ale or dark beer
- 4 cloves garlic (chopped)
Eggplant and Tomato Sauce

Place the cut eggplant, chopped garlic, sliced onion and halved tomatoes in a bowl
- 1 eggplant – peeled and cut into chunks
- 28 oz. can - crushed tomatoes
- 1 red onion - sliced
- 3 large cloves of garlic – chopped
- 1 pint of grape tomatoes – halved
- 1 tablespoon of lemon juice
- 2 tsp. salt
- 1 tsp. ground black pepper
- 1/4 tsp. red pepper
- 1 tsp. dried oregano
- 1/2 cup fresh basil – chopped
- 1/4 cup red wine
- 1 lb. favorite macaroni
- Fresh grated Romano cheese
- Olive oil
Spare Ribs Roasted with Garlic & Red Pepper

- 4 About 4 lbs. pork spare ribs
- 1/4 cup olive oil
- 6 cloves garlic – crushed and chopped
- 1/2 tsp red pepper flakes
- 3 dried bay leaves
- 1 1/2 cups chicken broth
Chickpea Dip with Italian Parsley & Garlic

- DIP:
- 1 (13-ounce) can chickpeas, drained
- 1/2 cup Italian parsley (healthy handful)
- 2 large clove garlic
- 1 tablespoon orange marmalade
- 1/2 jalapeño with seeds
- Zest of 1 orange
- 1/2 cup plain yogurt or sour cream
- 3 tablespoons olive oil
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/2 teaspoon curry
- 1 tablespoon vinegar
