Baked Boneless Chicken Breast

Combine all of the ingredients for the brine in a soup pot
- For the Brine:
- 3 lbs. boneless chicken breast
- 15 oz. can cannellini beans – drained
- 1 tsp. ground cloves
- 1 tsp. sugar
- 1 tsp. salt
- 1 tsp. ground cumin
- 1 tsp. garlic powder
- Water to cover the chicken
- For The Sauce:
- 2 green tomatoes
- 3 cloves of fresh garlic
- 1/4 cup Italian parsley
- 1/4 cup fresh basil
- 1 small red onion
- 3-4 tablespoons olive oil
- 1/2 tsp. ground cumin
- 1/2 tsp. salt
- 1/2 tsp. sugar
- Juice of 1/2 lime
Spaghetti with Anchovy, Fresh Spinach & Tomatoes

Heat a large frying pan with 2-3 tablespoons olive oil
- 1 lb of fresh baby spinach
- 4 cloves garlic - chopped
- 2 vine ripe tomatoes - diced
- 1 bell pepper – any color - sliced
- 2 oz. can of anchovy filets in olive oil
- 3 tbs. olive oil
- 3 tbs. red wine
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. red pepper flakes
- Fresh Romano or Parmesan cheese for grating
- 1 lb. of your favorite spaghetti
- Olive oil for drizzling
Chopped Tomato Salad Crostini

Preheat Oven 350 degrees Place the sliced bread on a baking sheet and bake until slightly golden
- Fresh French or Italian bread – sliced
- For the Salad
- 2 vine ripe tomatoes – diced
- 3 cloves of garlic – chopped
- 1/2 red onion – diced
- 2 tbs. fresh dill – chopped
- 1 small Jalapeño – grilled – chopped with seeds
- 1 small – medium zucchini – diced
- 2 – 3 tbs. olive oil
- 2 tbs. balsamic vinegar
- 1 tsp. salt
- 1/2 tsp. black pepper
- Fresh Parmesan or Romano cheese - grated
Little Orange Cookies

- 2 cups flour
- 1 stick of sweet Butter – 1/2 cup
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 cup walnuts or almonds – or a combination of both
- 1 egg
- Zest of one whole orange

- For the Marinade:
- 10 bone-in chicken thighs with skin on
- 2 inch piece of fresh ginger – grated
- 4-5 cloves of garlic chopped
- 1/2 cup of Italian parsley – chopped
- Juice and zest of 2 limes
- 3 - 4 tbs. canola oil
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 tsp. ground cumin
- 1 tsp. sugar
- 1/2 tsp. cinnamon
- For the Escarole Salad:
- 1 head escarole – cleaned and torn
- 1 red onion – sliced thin
- 1/2 can - pitted black olives
- 2 vine ripe tomatoes – sliced
- Grated Romano or Parmesan cheese
- Salt
- Black pepper
- Balsamic vinegar
- Olive oil

Sweet Butter Crust: In your food processor, blend flour, sugar, salt and butter until a fine crumble forms
- Sweet Butter Crust:
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons sugar
- 1/8 teaspoon salt
- 1 stick unsalted butter, very cold and cubed
- 4 1/2 tablespoons ice cold water
- Crumble:
- 1/2 cup all-purpose flour
- 1/2 cup rolled oats
- 1/4 cup light brown sugar
- 1/4 cup sugar
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 4 tablespoons unsalted butter, cold and cubed
- Filling:
- 4-5 medium apples, peeled, cored and chopped
- 1/4 cup brown sugar
- 1/4 cup sugar
- 1 teaspoon all-purpose flour
- 1 tablespoon finely grated peeled fresh ginger
- 1 tablespoon fresh orange juice
- 1 teaspoon finely grated orange zest
- 1/8 teaspoon salt
- 2 tablespoons unsalted butter, at room temperature

- 4 zucchini – grated
- 5 cloves garlic – chopped
- 1 onion chopped

- Handful of fresh parsley – chopped

- 1 tablespoon capers – chopped
