Grilled Veggie and Pineapple Salad

Heat a large frying pan with the olive oil
- 1 head of Romaine lettuce
- 1 eggplant – peeled and quartered into bite size pieces
- 1 cup of fresh pineapple chunks
- 1 sweet onion – sliced
- 3 cloves garlic – chopped
- 1/2 cup fresh basil – chopped
- 1 bell pepper – sliced
- 1/4 tsp. salt
- 1/4 tsp. red pepper flakes
- 1/4 tsp. black pepper
- 2 tablespoons olive oil
- Fresh croutons – for garnish
Egg Sandwich with Spiced Sautéed Onions

In a small saucepan heat the butter with the sliced onions
- Eggs – the way you like them
- 1 red onion – sliced
- 2-3 tablespoons ketchup
- 1 tablespoon butter
- 1 tablespoon Worcestershire Sauce
- 1/2 tsp. ground cumin
- 1/4 tsp. turmeric
- 1/4 tsp. paprika
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- Your favorite bread for the sandwich
Crumble Cookies

Preheat Oven 375 degrees: Sift flour, salt and baking soda into a bowl
- 2 cups flour
- Pinch of salt
- 1/2 tsp. baking soda
- 5 tbs. butter
- 1/2 cup sugar
- 1 egg
- 1 tsp. almond extract
- 2 oz. chocolate bar – crumbled
- Powdered sugar - for dusting, if desired
Spaghetti with a “Light Mushroom & Scallion Alfredo”

This dish is easy, delicious and looks beautiful
- Sauce:
- 1 box of your favorite spaghetti
- 1 bunch of scallions – cut in medium pieces
- 4 cloves of garlic – chopped
- 1 quart of button mushrooms – sliced
- 1 bunch of Italian parsley – chopped
- Olive oil
- 3 cloves of garlic – chopped
- 4 pats of butter
- 1/2 cup of milk
- 1/2 cup of grated Romano cheese
- Dashes of fresh ground black pepper
Spaghetti Squash with Chick Peas and Sausage

This is a tasty side dish or main dish
- 1 spaghetti squash
- 1 – 1lb. 13oz. can of chick peas – drained
- 1 onion – sliced
- 1 long hot pepper – chopped
- 4 cloves garlic – crushed & chopped
- 1/2 cup parsley – chopped
- 1/2 tsp capers plus a little juice
- 4 hot sausages
- 3 tablespoons olive oil
- Romano cheese for grating
Baked Sweet and Spicy Peppers

Preheat Oven 350 degrees: Place the peppers whole on a baking pan
- 3 bell peppers
- 3 long hot peppers
- 4 cloves of garlic – chopped
- 1/2 tsp. salt
- 1 tsp. dried oregano
- 1/4 tsp. black pepper
- 3 tablespoons olive oil
Breakfast Sandwich

Slice and serve with a good cup of coffee
- 1 avocado – chopped with a drizzle of olive oil and dash of salt
- 1 garden tomato – sliced
- 1 red onion – sliced thin
- Handful of fresh basil – ripped
- Bread and Butter sandwich pickles
- 3 egg whites – plus a splash of milk - beaten
- Dash of ground curry
- Salt
- Black Pepper
- Butter
- Mayonnaise
- Olive oil
- Choice of your favorite bread
Easy Breadsticks

This is a wonderfully easy recipe, perfect for parties!
- 1 cup flour
- 1/4 cup Crisco shortening
- 1/2 cup water
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. garlic powder
- 1/2 tsp. dried oregano
- 1/4 tsp. turmeric
- 1/2 tsp. Olive oil
- Parchment paper
Chicken with Dumplings

Preheat Oven 350 degrees: Combine the ingredients for the rub in a small bowl
- Rub for Chicken:
- 3 1/2 lb. chicken
- 3 carrots
- 3 stalks celery
- 3 cloves garlic
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. turmeric
- 1/2 tsp. curry powder
- 2 tablespoons olive oil
- Dumplings:
- 1 cup flour
- 1 tbs. baking powder
- 1 tsp. sugar
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 tablespoon margarine
- 1/2 cup milk
Tomato Cutlets

Prepare the eggs, bread crumbs and sliced tomatoes
- 3 beefsteak tomatoes – sliced about 1/4 inch thick
- 6-7 baby eggplant - halved
- 2 eggs beaten with a splash of milk
- 1 cup - Italian style bread crumbs
- 1/2 cup Fresh Italian parsley – chopped
- Fresh grated Romano cheese
- Juice of 1/2 lemon
- Dashes – salt
- Dashes - pepper
- 2-3 tablespoons of olive oil
