Anise Cookies

- 3 egg yolks
- 1 tsp baking soda
- 7 tbs. Butter
- 1 cup sugar
- 2 cups flour
- Zest and juice of 1 lemon
- 1 tsp anise seeds
BBQ Chicken Kabobs

For Marinade and Kabobs Combine all of the above for the marinade and place in a container with the chicken
- 8 boneless chicken thighs – cut into chunks
- 3 bell peppers – any color – sliced into chunks
- 1 1/2 large onions – sliced into large pieces
- Kabob sticks – soaked in water for at least 10 minutes before using
- For the Marinade
- 2 cloves of garlic – chopped
- Juice of 2 limes
- 1 tsp. turmeric
- 1 tsp. ground coriander
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. paprika
- 2 tsp. chopped fresh basil
- 3 tbs. vegetable oil
- Tzatziki Sauce
- 10 oz. sour cream
- 1 small cucumber
- 1- 2 cloves of garlic
- Juice of 1/2 lemon
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 3 - 4 tbs. fresh dill
Pineapple Upside Down Cake

Preheat Oven 350 degrees: Melt the butter with the brown sugar
- For the Pineapples:
- 20 oz. can of pineapple chunks in heavy syrup
- 3 tbs. butter
- 1/2 cup brown sugar
- For the Cake:
- 1 cup sugar
- 3 eggs
- 1 tsp. vanilla extract
- 1 cup reserved pineapple juice
- 2 tbs. butter
- 3 1/2 cups flour
- 2 tsp. baking powder
- 1/2 cup sour cream
Fresh Salsa and Meatballs

Combine all of the above ingredients in a bowl and mix together well
- For the Meatballs:
- 2 1/4 lbs of ground beef
- 3 slices of rye bread – soaked in milk
- 2 eggs
- 1/4 cup of parmesan cheese
- 1/4 cup of shredded mozzarella
- 1/4 cup of chopped Italian parsley
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- For the Salsa:
- 3 bell peppers
- 1 pint of grape tomatoes
- 1/2 onion
- 3 cloves garlic
- 1/2 jalapeño
- 2 tablespoons of raisins
- 2 tablespoons honey
- 1 tablespoon capers
- Handful of fresh basil
Greek Salad with Lemon Oregano Lentils

For the Lentils Heat a heavy saucepan with the olive oil, garlic, parsley and lemon chunks
- For the Lentils
- 1 cup lentils
- 1 lemon – sliced into small chunks with skin
- 1/2 cup Italian parsley – chopped
- 3 cloves of garlic – chopped
- 3 cloves of garlic – chopped
- 1 1/2 cups chicken broth
- 1 tsp. dried oregano
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. red pepper flakes
- For The Greek Salad
- 1 large head of Romaine lettuce – cleaned and ripped
- 1/2 Spanish onion – sliced
- 1/2 red onion – sliced
- 1 cucumber - sliced
- 2 long hot peppers
- 1 vine ripe tomato - diced
- 1 bell pepper – sliced thin
- 1/4 cup of Italian parsley - chopped
- 1 chunk of feta cheese
- 1/2 tsp. dried oregano
- 1/2 tsp. black pepper
- 1 tsp. salt
- For the Dressing
- Juice of 1 lemon
- 1/4 cup of olive oil
- Splash of water

- Icing:
- 1 box of chocolate cake mix
- 2 cups all purpose flour
- 1 cup coco
- 1 cup milk
- ¼ cup brewed coffee
- 1 tablespoon vanilla
- 3 tablespoons orange marmalade
- 5 eggs
- 1/3 stick sweet butter – softened
- ½ cup applesauce
- 8 oz. package cream cheese
- 1 cup powdered sugar
- ½ cup coco
- 1 tablespoons instant coffee
- 1 tsp rum extract
- ½ stick softened butter
Oven Fried Boneless Pork Chops

Beat the eggs with a splash of milk
- Coating:
- 6 boneless pork chops (about 1 inch thick)
- 2 eggs – beaten plus splash of milk
- Olive oil for drizzling
- 2 cups flour
- 1/4 cup grated Romano cheese
- 1 tps. Paprika
- 1/2 tps. Ground black pepper
- 1/2 tsp. salt

- Sauce:
- 2 1/2 lbs. boneless chicken breast
- 2 tbs. - soy sauce
- Drizzle of sesame oil
- 2 tbs. - teriyaki sauce
- Drizzle of lime juice
- 1 tbs. - oyster sauce
- Drizzle of fish sauce
- Dashes of salt
- Dashes of black pepper
- 1 quart button mushrooms – sliced
- 1 onion – sliced
- 1 bunch of broccoli - blanched
- 3 vine ripe tomatoes – quartered
- 5 cloves garlic – chopped
- 1 handful of fresh basil – chopped
- 1 tsp. brown sugar
- Dashes of salt
- Dashes of black pepper
- 1 tbs. Worcestershire sauce
- Rice:
- 2 cups uncooked rice
- Dash of turmeric
- Dash of ground ginger
Pancakes with Strawberry Sauce

Pancakes: Combine all of the above in a bowl and mix
- Pancakes:
- 1 cup self-rising flour
- 2 eggs
- 1 tsp. sugar
- 1/2 cup milk
- 1 cup water
- 2 tablespoons vegetable oil
- Low-fat sour cream for the pancakes
- For the Strawberry Sauce:
- 4 cups fresh strawberries
- 1/4 cup sugar
- 1 tsp. vanilla
- 1/2 tsp. cinnamon
- 1 1/2 tsp. cornstarch
- 1/4 cup water
