Grilled Chicken Breast

Combine all of the ingredients for the rub in a small bowl and mix
- For the Spice Rub:
- 3 lbs. boneless chicken breast
- 2 tablespoons olive oil
- 1 tsp. curry powder
- 1 tsp. garlic powder
- 3/4 tsp. ground cumin powder
- 1/2 tsp. sugar
- 1/2 tsp. ground cinnamon
- 1/2 tsp. turmeric
- 1 tablespoon Worcestershire Sauce
- 1 tablespoon soy sauce
Pesto Ravioli

For the Pesto: Combine all of the ingredients for the pesto in a food processor and blend until smooth
- For Pesto:
- 4 cups fresh basil
- 2 cups Parmesan or Romano cheese
- 6 cloves garlic
- Dashes of red pepper flakes
- 1/2 cup walnuts
- Salt to taste
- Olive Oil for drizzling
- For Ravioli dough:
- 3 egg yolks
- 2 cups flour, sifted
- 1/4 teaspoon of salt
- 1/2 cup water
- For Light Ravioli Sauce:
- 1 tablespoon butter
- 4 cloves garlic, chopped
- Handful fresh basil
- Dashes of Red Pepper Flakes
- 1/2 cup chicken broth
- Juice of half lemon
- Olive Oil for Drizzling
Morning Apple Cake

Preheat oven to 350 degrees F
- Apples:
- 2 apples – peeled, cored, and chopped
- 1/2 teaspoon ground cinnamon
- 1 tablespoon brown sugar
- 1 tablespoon granulated sugar
- 1/2 teaspoon vanilla extract
- For the cake:
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup plus 2 tablespoons granulated sugar
- 1/3 cup vegetable oil
- 2 eggs
- 1/2 cup sour cream
- 1/2 teaspoon vanilla extract
- For the crumble:
- 3 tablespoons butter
- 1/4 cup flour
- 2 tablespoons brown sugar
- 1 tablespoon granulated sugar
- For the icing:
- 1/4 cup confectioner’s sugar
- 1-2 tablespoons milk

- 1/4 cup whole miolk
- 1 cup rolled oats
- 1 teaspoon vanilla
- 1/4 cup chocolate chips - dark chocolate or white
- 2 tablespoons Biscoff (or peanut butter)
Oven Fried Chicken Breast

These are a wonderful alternative to fried and are juicy and tender
- For the Marinade:
- 4 - Split chicken breasts with bone
- 1 tsp. sugar
- 1 tsp. garlic powder
- 1 tablespoon vinegar
- Juice of 2 lemons
- 1 tsp. salt
- 1/2 tsp. chili powder
- For the Coating:
- 3 cups Corn Flakes
- 1/2 cup corn meal
- 2 eggs – beaten with a splash of water
- 1 cup flour
- 1/2 tsp. salt
- 1/2 tsp. garlic powder
- 1/2 tsp. black pepper
- 1/2 tsp. chili powder
- 1/2 tsp. garlic powder
- Olive oil for drizzling
Simple Lemon Bundt Cake with Lemon Syrup

- For the Syrup:
- 2 1/2 cups flour - sifted
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tbs. lemon zest
- 3 tbs. fresh lemon juice
- 1 tbs. vanilla extract
- 1/4 cup vegetable oil
- 1 cup sugar
- 2 eggs
- 1 cup sour milk – milk plus 1 tbs. white vinegar
- Powdered sugar for dusting
- 1/4 cup water
- 1/4 cup lemon juice
- 1/2 cup sugar
Saturday Night Omelet

This is a nice light dinner
- 7 eggs plus a splash of milk – beaten
- 1 bell pepper – sliced
- 1/2 onion – sliced
- 2 cloves of garlic – chopped
- 1 tablespoon of pimento olives – chopped
- 1 tablespoon o f sun dried tomatoes – chopped
- 1 quart of button mushrooms – sliced
- 1/2 cup Monterey Jack cheese – grated
- 1/4 cup parmesan cheese – grated
- Dash of salt
- Dash of black pepper
- Dash of chili powder
- Dash of garlic powder
- Drizzle of olive oil
Easy Pineapple “Shortcake”

Soupa Avgolemono (Egg and Lemon Soup – “My Way”)

- 2 stalks celery – diced
- 1/2 cup parsley – chopped
- 1/2 cup carrots - diced
