Fresh Roasted Veggies

Preheat the Oven 350 degrees: Place all of the vegetables in a baking pan
- 4-5 bell peppers – sliced
- 4-5 cloves of garlic – sliced
- 1 onion – sliced
- 4 zucchini – yellow or green – quartered
- 1 jalapeño – sliced with seeds
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. red pepper flakes
- 1/2 tsp. ground oregano
- 3-4 tablespoons of olive oil
Walnuts and Oats ~ Cookies

These are perfect dipping cookies
- 3 cups flour
- 1/2 tsp. baking powder
- 1 cup oats
- 5 tablespoons butter
- Dashes of ground nutmeg
- Dashes of ground cinnamon
- 1 tablespoon of coco
- 1/4 tsp salt
- 2 oz. Butterfinger candy bar
- 1/2 cup walnuts
- 3/4 cup sugar
- 1/2 cup brown sugar
- 2 eggs
- 1 tsp vanilla
Quick Spinach and Barley Soup

Heat a soup pot with a tablespoon of butter
- 1 lb. fresh baby spinach
- 1 onion – sliced
- 3 cloves garlic – chopped
- 1/4 cup chopped carrots
- 1 quart button mushrooms – sliced
- 1 tablespoon butter
- 15 oz. can red kidney beans – drained
- 1 cup instant barley
- 5 cups chicken broth
- 1 tbs. olive oil
- 1/4 cup pastina noodles
- Fresh grated Romano or Parmesan cheese
Sautéed Boneless Chicken Thighs

These are delicious and easy to prepare
- 3 About 3 lbs. boneless chicken thighs
- 1/2 cup chopped parsley
- 2 tablespoons light mayonnaise
- 2 tablespoons balsamic vinegar
- Juice of 1/2 lemon
- 2 tablespoons olive oil
- 1/2 tsp turmeric
- 1/2 tsp black pepper
Griddle Fried Eggs with Basil & Red Onion

Cherry Vanilla Ice Cream

Whip the heavy cream to form peaks; do not over whip the cream
- 2 cups heavy cream
- 1 1/2 tbs. Nielson Massey Vanilla
- 14 oz. can sweetened condensed milk
- Dash of salt
- 3 cups pitted fresh cherries
Sautéed Peppers with Tomatoes

Heat a large frying pan with 2 tablespoons of olive oil
- Spices – adjust to your liking:
- 3 bell peppers (any color) – sliced
- 3 tomatoes – quartered
- 5 cloves of garlic – chopped
- 1 red onion - sliced
- 1/2 cup Italian parsley – chopped
- 1 tsp. capers – chopped - plus tablespoon of juice
- 3-4 tablespoons – olive oil
- 3/4 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. red pepper flakes
- 3/4 tps. Dried oregano
- 1/4 tsp. paprika
- 1/4 tsp. garlic powder
- 1/4 tsp. curry powder
Cold ~ Marinated Vegetable Salad

This is a good summer salad
- Marinade:
- 2 red bell peppers – sliced
- 1 onion – sliced
- 1 zucchini – sliced
- 6 oz. jar of marinated artichoke hearts – plus about 1/4 of the marinade
- 1/2 cup of pitted black olives
- 1 tablespoon of capers – plus a little of the caper juice
- Juice of 1 lemon
- Juice of 1 lime
- 1/4 cup of vinegar
- 1/2 tsp. of salt
- Dashes of red pepper flakes
- 1 tablespoon of sugar
Chicken Strips with Spicy Sauce

- Marinade:
- 2 lbs. boneless chicken breast – cut into strips
- 2 cups Corn Flakes – crushed
- 1 cup flour
- 1 cup cornmeal
- Vegetable oil for frying
- 1 cup of sour milk or buttermilk – (to make sour milk – 1 cup of milk plus 1 tablespoon of white vinegar or lemon juice)
- 1/2 tsp. ground cumin
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/2 tsp. garlic powder
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/2 tsp. garlic powder
- For the Spicy Sauce:
- 28 oz. can of crushed tomatoes
- 1 onion – sliced
- 1 jalapeño – chopped with seeds
- 5 cloves of garlic – chopped
- Healthy handful of fresh basil- chopped
- 1 tsp. of brown sugar
- 1 tbs. of vinegar
- 1/2 tsp. of garlic powder
- 1/2 tsp. of chili powder
- 1/2 tsp. of ground cumin
- 1/2 tsp. of salt
- 1/4 tsp. of black pepper
Yellow Squash with Sausage and Pasta

Heat a large frying pan and add the sausage links
- 6-7 yellow squash – peeled and sliced
- 7 – 8 Italian sausage links
- 3-4 cloves of garlic – chopped
- 1 red onion – sliced
- 1/4 cup Italian parsley – chopped fine
- 1/4 cup fresh basil – chopped
- 3/4 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. red pepper flakes
- 1 tsp. dried oregano
- 2 cups crushed tomatoes
- 1 1/2 cups water
- 1 lb. of your favorite pasta
- Fresh grated Parmesan cheese or Romano
- Olive oil for drizzling
- Fresh basil garnish
- Canola oil for sautéing
