- FOR THE BRINE:
- 2 gallons cold water
- 1 to 1 1/2 cups bourbon
- 1 cup kosher salt, such as Morton’s brand
- 1 cup brown sugar
- 1 large navel orange, sliced into 6 wedges
- 2 bay leaves, crumbled
- 1 tablespoon black peppercorns
- 1 3-inch cinnamon stick, coarsely broken
