- NOTE:
- 2 sweet potatoes, chopped into 1 inch cubes
- Olive oil
- Butter
- Kosher salt and fresh cracked pepper
- Pinch garlic powder, optional
- 1 small yellow onion, minced
- 1 teaspoon Worcestershire sauce or to taste
- You can substitute balsamic vinegar instead of Worcestershire sauce

- ■ 2 cups heavy whipping cream
- ■ 1 package (5.2 ounces) Boursin cheese with black pepper

- ■ 2 1/2 to 3 pounds Yukon gold or red-skinned potatoes, peeled and sliced 1⁄3-inch thick

- ■ 2 tablespoons minced fresh chives, divided
- ■ 1/2 cup (2 ounces) shredded Parmesan cheese, optional

In a large pot, boil potatoes in water 10 minutes
- GARNISH:
- 2 1/2 # Baby Red Potatoes, diced into bite size pieces
- 1/2 pkg. bacon cut in small pieces
- 1 Medium Onion

- 4 Cups Water
- 4 Chicken Bouillon cubes (use 1 cup of hot potato water to dissolve)

- SWEET POTATOES:
- 3 cups mashed sweet potatoes (from baked sweet potatoes)
- 1/2 stick butter, melted
- 1 teaspoon vanilla
- 1/2 cup brown sugar
- 1 egg, lightly beaten
- TOPPING:
- 1 bag (6 ounce) pecan halves
- 4 tablespoons butter, unsalted
- 1/4 cup honey (I used chestnut honey)
- 2 tablespoons sugar
- 1 teaspoon chipotle chile powder
- salt
