I make this every Thanksgiving morning for breakfast
- 2 2/3 cup old fashioned oats
- 1/2 /cups craisins
- 4 cups milk
- 1/3 cup packed brown sugar
- 2 Tbsp butter melted
- 1 tsp ground cinnamon
- dash of nutmeg
- 1/4 tsp salt
- 2 medium apples chopped (2 cups)
- 1/2 cup chopped walnuts
Grilled chicken stuffed with Tomato, Basil , and Mozzarella

Butterfly chicken breasts: Cut breasts in half horizontally, stop about 1/2 inch before reaching the opposite side
- 6 boneless, skinless, chicken breast halves
- 12 fresh basil leaves
- 2-3 tomatoes sliced 1/4 inch thick
- 6 slices fresh mozzarella cheese
- 1 bottle of your favorite Italian salad dressing
- salt and pepper to taste
- toothpicks for secureing

- 1 (20-ounce) can crushed pineapple undrained
- 2 packages (small box) raspberry Jello
- 1 (16-ounce) can whole berry cranberry sauce
- 1 apple, chopped
- 2/3 cup walnuts, chopped
- Water, as needed
Veg-Head Three-Bean Chili

Over moderate heat, add oil to a deep pot and combine onion, peppers, and garlic
- 2 tablespoons (2 turns around the pan) olive or vegetable oil
- 1 medium yellow skinned onion, chopped
- 1 large red pepper, seeded and chopped
- 1 large green pepper, seeded and chopped
- 1 large jalapeno pepper, seeded and chopped
- 4 cloves garlic, crushed and chopped
- 1 cup pale beer or vegetable stock/broth
- 1 (32- ounce) can crushed tomatoes
- 1 (14-ounce) can black beans
- 1 (14-ounce) can dark red kidney beans
- 1 tablespoon ground cumin
- 2 tablespoons chili powder
- 1 tablespoon cayenne hot pepper sauce, several drops
- 1 teaspoon coarse salt
- 1 cup spicy vegetarian refried beans
- 8 ounces (2 cups shredded) spicy monterey jack or smoked cheddar
- Chopped scallions, whites and greens
- Diced fresh seeded plum tomato
- Blue and red corn tortilla chips or black bean tortilla chips, for dipping

- 2 cups sugar
- 5 extra-large eggs at room temperature
- 1 1/2 teaspoons pure vanilla extract
- 1 1/2 teaspoons pure almond extract
- 3 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 cup buttermilk
- 14 ounces sweetened, shredded coconut
- 1 pound cream cheese at room temperature
- 3/4 pound (3 sticks) unsalted butter, room temperature
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon pure almond extract
- 1 1/2 pounds confectioners' sugar, sifted

- 1 1/2 cups gingersnap crumbs About 39 cookies
- 6 Tbsp butter, melted
- 3 Tbsp powered sugar
- 1 3/4 cups heavy cream
- 15 oz semi sweet chocolate, chopped
- 1 tsp vanilla extract

Searing and grilling meat
- When SEARING or GRILLING meat, don't move it! If you have to pry it from the pan or grill grate, it's not ready yet. Once it develops a nice crust, it 'll release from the pan on it own.
- Only turn it once !
Omelet for Two

- 1/4 pound good thick-cut bacon
- 1 tablespoon unsalted butter
- 1 cup medium-diced Yukon gold potato
- 1/2 cup chopped yellow onion
- 1 tablespoon minced jalapeno pepper
- 5 extra-large eggs
- 2 tablespoons milk or cream
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 cup chopped scallions, white and green parts
- 4 ounces extra-sharp Cheddar, diced, plus extra grated cheese, for garnish
House seasoning
