- 1/4 cup good olive oil, plus more for drizzling
- 1 1/2 tablespoons balsamic vinegar
- 2 large garlic cloves, minced
- 2 teaspoons sugar
- Kosher salt and freshly ground black pepper
- 16 ounces fresh salted mozzarella
- 12 fresh basil leaves, julienned

- 1 tablespoon pure vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon instant coffee granules
- 1/2 cup heavy cream
- 8 ounces good semisweet chocolate chips
- 1/2 teaspoon instant coffee granules

- 5 (2) Cups (lbs) Blackberries
- 1/2 (4) Cup (oz )Juice/Water; Drained
- 4 (2) Tbs (oz) Sugar
- 4 (2) Tbs (oz) Water
- 1 1/2 Tsp Water; In addition to the 4 Tbs
- 3 (1) Tbs (oz ) Cornstarch
- 1 1/2 Tsp Cornstarch; In addition to the 3 Tbs
- 4 (2) Tbs (oz) Sugar
- 1/4 Tsp Salt
- 3/4 Tsp Cinnamon
- 2 (10) Tsp (g) Lemon Juice
- 1 (.25) Tbs (oz) Butter
Pecan Pie

Position rack on lower third of the oven and preheat to 350
- 1 unbaked 9 inch pie crust chilled
- 3 eggs
- 3/4 cup dark corn syrup
- 2/3 cup firmly packed dark brown sugar
- 1/4 cup light molasses
- 1/4 cup butter, melted and slightly cooled
- 1 Tbsp Kahlua
- 1/4 tsp salt
- 1 1/2 cup coarsely chopped pecans
- Whipped cream for serving
Trick-- perfect pasta

- For perfect pasta every time --
- bring a pot of water to a boil. Drop pasta into water (any kind of pasta) . Remove from heat. Cover and let pasta stand for 15 minutes. Drain pasta. Perfect every time-- any kind.
Black Bean Salsa --- Christine's favorite

Whisk first 6 ingredients in a large bowl to blend
- 1/4 cup fresh lime juice
- 1/4 cup chopped fresh cilantro
- 2 Tbsp olive oil
- 4 tsp minced canned chipotle chiles
- 1 Tbsp red wine vinegar
- 1 tsp ground cumin
- 2 15oz cans black beans,rinsed and drained
- 1 1/2 cups fresh corn, blanched. (I like to grill the corn)-- or frozen kernels thawed
- 1 1/2 cups chopped red onion
- 1 1/2 cups chopped tomatoes - about 3 medium
- 1 cup chopped green bell pepper
- 1 large ripe avocado, halved,pitted,peeled,diced
- Tortilla chips
Grilled Sausages In Pita Bread

Grill Italian sausage until cooked through about 10 minutes
- 20 sausages -- Halved crosswise
- 2 5oz bags mixed greens
- assorted mustard's

- 3 pounds ripe tomatoes, halved, seeded, chopped
- 3/4 cup chopped fresh basil(packed)
- 3 Tbsps fresh lime juice
- 2 garlic cloves,chopped
- 3/4 tsp ground cumin
- 3/4 tsp hot pepper sauce
- pinch of salt
Chili seasoning mix

Stir together all ingredients
- 3/4 cup chili powder
- 2 Tbsp ground cumin
- 2 Tbsp dried oregano
- 2 Tbsp dried minced onion
- 2 Tbsp seasoned salt
- 2 Tbsp sugar
- 2 tbsp dried minced garlic
