- 5 pounds beef brisket, cut in 1-inch cubes
- 1/4 cup olive oil
- 2 cups chopped yellow onions
- 6 large garlic cloves, minced
- 2 tablespoons chili powder
- 1 tablespoon red pepper flakes, crushed
- 1 tablespoon cayenne pepper, or to taste
- 2 tablespoons ground cumin
- 2 green peppers, seeded and diced
- 1 bay leaf
- 6 cups tomatoes, chopped with their liquid
- Salt and freshly ground black pepper
- 1/2 cup strong coffee
- 2 (15-ounce) cans kidney beans
- 2 tablespoons chopped basil leaves
- Sour cream
- Grated Cheddar
- Diced tomato
- Tortilla chips
- Guacamole (see recipe)
French Chocolate Bark

- 8 ounces very good semisweet chocolate, finely chopped
- 8 ounces very good bittersweet chocolate, finely chopped
- 1 cup whole roasted, salted cashews
- 1 cup chopped dried apricots
- 1/2 cup dried cranberries or dried cherries
- 1/4 cup crystallized 1/2 inch diced
- 1/4 cup golden raisins
Lemon Brined Fried Chicken

- flour mixture:
- 1 gallon of water
- 1 small bunch parsley
- 1 small bunch thyme
- 1 cup plus 2tsp kosher salt
- 1/4 cup honey
- 12 bay leaves
- 1 head of garlic diced
- 2 Tbsp black peppercorn
- 3 rosemary sprigs
- Finely grated zest and juice of 2 lemons
- 3 lbs chicken pieces
- 3 cups flour
- 2 Tbsp garlic powder
- 2 Tbsp onion powder
- 2 tsp cayenne pepper
- salt and pepper
- 2 cups buttermilk
- Peanut oil for frying
Coconut Custard Pie

Preheat oven to 350. In a large bowl combine melted butter, eggs , flour, sugar, coconut, and milk
- 4 Tbsps (1/2 stick) butter, melted
- 3 eggs, beaten
- 2 Tbsps all- purpose flour
- 3/4 cup sugar
- 1 cup shredded sweetened coconut
- 1 1/2 cup milk
- 1 9 inch unbaked pie crust

- 5 lbs orange-fleshed yams - about 6 large
- 1/2 cup butter cut into small pieces plus a little extra for greasing
- 1/2 cup firmly packed brown sugar
- salt and pepper
- 1 3/4 cups marshmallows (optional)
- 1/2 cup fresh orange juice

- 1 3-4 lb flank steak
- 1 bottle Lawry's Sesame Ginger marinade sauce

Mix all ingredients together
- 1 cup chili sauce
- 1/2 cup vegetable oil
- 1/2 cup red wine vinegar
- 1 cup red wine
- 1/2 tsp garlic salt
- 2 Tbsps Worcestershire sauce
- 2 tsp yellow mustaed
- 1 Tbsp salt
Chicken and white bean chili

After sauteing the onion add the remaining ingredients and simmer for 30 minutes or more
- 2 medium onions, diced and sauteed in 1/2 stick butter
- 32 oz box chicken broth
- 1 chicken bullion cube
- 4 15oz cans white northern beans -drained
- 2 cans diced green chilies
- 3 pks frozen white corn ( green giant)
- 2 Tbsp cumin
- 1/2 tsp cayenne pepper
- 1 Tbsp garlic powder
- 1 Tbsp oregano
- 4 cups cooked chicken, diced or cubed
- 3 cups sour cream
Green Chili Enchilada Sauce

This sauce is great over any Mexican food, Enchiladas, Burritos, Rellenos, and even Eggs and Tamales
- Enchilada Sauce:
- 3 Tbsp oil
- 1/2 cup Finley chopped onion
- 4 tsp minced garlic
- 3 Tbsp flour
- 2 7 oz cans chopped green chilies
- 3/4 tsp ground cumin
- 2 cups chicken broth
- 1 can mild rotel tomatoes and green chilies
- 2 tsp sugar
