Cranberry Sauce with Cider and Cinnamon

super easy
- 2 cups (16 oz) apple cider
- 2 cups sugar
- 1/4 cup water
- 1 cinnamon stick
- 2 bags fresh cranberries

Preheat oven to 400 degrees
- 1 1/2 cups all purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp ground cinnamon
- 1 cup sugar
- 1 12 oz pkg frozen unsweetend raspberries, thawed
- 2 eggs, well beaten
- 2/3 cup vegetable oil
- 1/2 cup chopped pecans
Pinto Beans

- 1 15oz can pinto beans
- 1 can rotel tomatoes
- salt and black pepper to taste
Italian sausage with mint over Penne Pasta

In a large skillet, cook sausage,garlic and mint until sausage is browned
- 1 lb Italian sausage, casing removed
- 2 large cloves garlic, minced
- 1 cup chopped mint
- 1 14oz can stewed tomatoes, pureed
- 1 8oz can tomato sauce
- 1 cup water
- salt and pepper to taste
- 1 lb Penne Pasta
Trick -- keep your brown sugar soft !

- 5 pounds McIntosh or Macoun apples
- Grated zest of 1 orange
- Grated zest of 1 lemon
- 2 tablespoons freshly squeezed orange juice
- 2 tablespoons freshly squeezed lemon juice
- 1/2 cup granulated sugar
- 2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1 1/2 cups flour
- 3/4 cup granulated sugar
- 3/4 cup light brown sugar, packed
- 1/2 teaspoon kosher salt
- 1 cup oatmeal
- 1/2 pound cold unsalted butter, diced

In a saucepan melt butter over low heat
- 2 Tbsp butter
- 3 Tbsp flour
- 2 cups of milk and 1/4 tsp salt heated to a boil
- OR
- 2 cups boiling chicken stock

- 1 1/4 cups warm water (100 to 110 degrees)
- 2 packages dry yeast
- 1 tablespoon honey
- Good olive oil
- 4 cups all-purpose flour, plus extra for kneading
- Kosher salt
- 4 garlic cloves, sliced
- 5 sprigs fresh thyme
- 1/4 teaspoon crushed red pepper flakes
- Freshly ground black pepper
- 3 cups grated Italian Fontina cheese (8 ounces)
- 1 1/2 cups grated fresh mozzarella (7 ounces)
- 11 ounces creamy goat cheese such as Montrachet, crumbled
- For the salad
- 1/2 cup good olive oil
- 1/4 cup freshly squeezed lemon juice
- 8 ounces baby arugula

cook bacon in a large pot over medium high heat until crisp
- 10 bacon slices, Chopped
- 2 Tbsps (1/4 stick) butter
- 3 medium onions, chopped
- 1 cup chopped red bell pepper
- 1/4 cup all purpose flour
- 9 cups chicken broth
- 3 cups sweet potatoes chopped in 1/2 inch cubes
- 1 1/2 lbs russet potatoes, peeled cut into 1/2/inch cubes
- 2 16oz bags frozen corn kernels
- 1 cup whipping cream
- 4 cups diced chicken
- 2 cups chopped green onion
- 1/2 cup chopped cilantro

- 4-5 lbs.pork shoulder
- 5 cloves garlic
- 1 tablespoon salt
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon black pepper
- 1 teaspoon oregano
- 1/4 teaspoon cinnamon
- 1/2 teaspoon cayenne pepper
- juice of 1 lime
- 1/2 cup orange juice
- 12 ounces beer
- 1/2 cup salsa
- 1 tablespoon chipotle hot sauce (optional)
