Strawberry Cake

Southern Living MARCH 2004
- 1 (18.25-ounce) package white cake mix
- 1 (3-ounce) package strawberry gelatin
- 4 large eggs
- 1/2 cup sugar
- 1/4 cup all-purpose flour
- 1/2 cup frozen strawberries thawed and pureed
- 1 cup vegetable oil ( I like to use coconut oil )
- 1/2 cup milk
- Strawberry Buttercream Frosting
- Garnish: whole strawberries
VEGETARIAN COCONUT RICE

Preheat the oven to 350 degrees F
- 3/4 cup walnut pieces
- 2 tablespoons apple cider vinegar
- 1 tablespoon dijon mustard
- 1 tablespoon sugar
- Kosher salt and freshly ground pepper
- 2 tablespoons extra-virgin olive oil
- 2/3 cup sour cream
- 1 small or 1/2 large head green cabbage, finely shredded
- 3 tablespoons chopped fresh cilantro
- 3 tablespoons chopped fresh dill
- 3 tablespoons chopped fresh tarragon
- 8 scallions, chopped
- 2 cups seedless green grapes, chopped

- 2 14oz cans stewed tomatoes-Pureed
- 2 10oz cans condensed tomato soup
- 3 cups heavy whipping cream
- 1/2 cup thinly sliced basil leaves
- 1/2 stick butter
- 1/2 cup Parmesan cheese
- 1 pkg garlic croutons
- salt and pepper to taste
Fillet of Beef Bourguignonne

With a sharp knife, cut the fillet crosswise into 1-inch-thick slices
- 1 (3-pound) filet of beef, trimmed
- Kosher salt and freshly ground black pepper, for seasoning plus 1 teaspoon salt and 1/2 teaspoon pepper
- 3 to 4 tablespoons good olive oil
- 1/4 pound bacon, diced
- 2 garlic cloves, minced
- 1 1/2 cups good dry red wine, such as Burgundy or Chianti
- 2 cups beef stock
- 1 tablespoon tomato paste
- 1 sprig fresh thyme
- 1/2 pound pearl onions, peeled
- 8 to 10 carrots, cut diagonally into 1-inch-thick slices
- 3 tablespoons unsalted butter, at room temperature
- 2 tablespoons all-purpose flour
- 1/2 pound mushrooms, sliced 1/4-inch thick

- 16 ounces very good white chocolate, finely chopped

In a 3 quart saucepan, heat olive oil and saute garlic until golden brown
- 1/4 cup olive oil
- 2 Tbsps minced garlic
- 2 Tbsps minced fresh basil or 1 Tbsp dried basil
- 1 tsp oregano
- 1 Tbsp dried Italian seasoning
- 3 16 oz cans stewed tomatoes Pureed (I like Del Monte best)
- 1 8 0z can tomato sauce
- salt & pepper to taste
- 1 can tomato paste ( you probably wont need the whole can)
Broccoli and cheese soup

- 3/4 cup chopped onion
- 4 cups broccoli Frozen or fresh
- 32 oz chicken broth

- 1/2 cup half and half
