  • 1/2 cup ice water
  • 4 Granny Smith apples
  • 1/2 cup sugar
  • 4 tablespoons (1/2 stick) cold unsalted butter, small diced
  • 1/2 cup apricot jelly or warm sieved apricot jam
  • 2 tablespoons Calvados, rum, or water
  • Frozen puff pastry can also be used ;
  • Thaw in refrigerator.

One summer I made this pie once a week

  • 2/3 cup plus 2 tsp sugar
  • 1/2 vanilla bean, cut crosswise into1/2- inch pieces
  • 3 Tbsp all purpose flour
  • 3 3/4 lbs firm but ripe upeeled peaches. About 10 cups. Halved, pitted, each half cut into 4 slices.
  • 2 ready made pie crust
  • 2 Tbsp butter cut into 1/2 inch cubes
  • whipping cream for glaze
