French Apple Tart

- 2 cups all-purpose flour
- 1/2 teaspoon kosher salt
- 1 tablespoon sugar
- 12 tablespoons (11/2 sticks) cold unsalted butter, diced
- 1/2 cup ice water
- 4 Granny Smith apples
- 1/2 cup sugar
- 4 tablespoons (1/2 stick) cold unsalted butter, small diced
- 1/2 cup apricot jelly or warm sieved apricot jam
- 2 tablespoons Calvados, rum, or water
- Frozen puff pastry can also be used ;
- Thaw in refrigerator.
Summer peach pie

One summer I made this pie once a week
- 2/3 cup plus 2 tsp sugar
- 1/2 vanilla bean, cut crosswise into1/2- inch pieces
- 3 Tbsp all purpose flour
- 3 3/4 lbs firm but ripe upeeled peaches. About 10 cups. Halved, pitted, each half cut into 4 slices.
- 2 ready made pie crust
- 2 Tbsp butter cut into 1/2 inch cubes
- whipping cream for glaze
- vanilla

- 1 tablespoon coarsely cracked black peppercorns

- 1 14.5 oz can stewed tomatoes pureed
- 1 & 1/2 tsps ground cumin
- Salt and pepper to taste
- 2 cans mild rotel tomatoes
- 32 oz chicken broth
- 1 cup water
- 2 Tbsp sugar (opional)

- 1 lemon, halved
- 6 cloves garlic sliced

- 1 large yellow onion, thickly sliced
- 4 carrots cut into 2 inch chunks
- 1 bulb of fennel, tops removed, and cut into wedges
