Thanksgiving Stuffing

Cook the onion and celery in a little butter until tender
- 1 pkg.Peperidge Farm cubed, herb seasoned stuffing;
- 1/4 cup dried cranberries
- 8 dried apricots diced
- 1 apple chopped
- 1 cup walnuts or pecans
- 1 chopped onion or leeks or shallots
- 4 stocks celery chopped
- 1 lb.cooked sausage
- 1/4 about 1/4 cup poultry seasoning
- 4 tablespoons butter
- 32 0z Hot chicken broth
- salt and pepper to taste

Company Pot Roast

Barefoot Contessa
- 1 (4 to 5-pound) prime boneless beef chuck roast, tied
- Kosher salt and freshly ground black pepper
- All-purpose flour
- Good olive oil
- 2 cups chopped carrots (4 carrots)
- 2 cups chopped yellow onions (2 onions)
- 2 cups chopped celery (4 stalks)
- 2 cups chopped leeks, white and light green parts (2 to 4 leeks)
- 5 large garlic cloves, peeled and crushed
- 2 cups good red wine, such as Burgundy
- 2 tablespoons Cognac or brandy
- 1 (28-ounce) can whole plum tomatoes in puree
- 1 cup chicken stock, preferably homemade
- 1 chicken bouillon cube
- 3 branches fresh thyme
- 2 branches fresh rosemary
- 1 tablespoon unsalted butter, at room temperature

Yucatan Chicken Skewers with Peanut-Red Chile BBQ Sauce and Red Cabbage Slaw

- 6 chicken thighs, skinless and boneless, cut in 1/2 lengthwise
- 24 wooden skewers, soaked in water for 30 minutes
- 1/2 cup fresh squeezed orange juice
- 1/4 cup fresh squeezed lime juice
- 2 tablespoons honey
- 2 tablespoons canola oil
- 2 tablespoons ancho chili powder
- 3 cloves garlic, coarsely chopped
- Salt and freshly ground black pepper
- Butter lettuce leaves, to serve
- Peanut-Red Chile BBQ Sauce, recipe follows

On the flour tortilla layer the cheese, chicken, and spinach on one half of the tortilla
- 1 8 inch flour tortilla
- 1/4 cup of roasted chicken, bite sized. (Store bought is fine)
- 1/4 cup Monterey Jack Cheese, shredded
- 1/4 cup(packed) fresh spinach leaves
- salt to taste (i like to use a pinch of house seasoning)

- 1/2 cup 2tbs (5 oz )lemon juice
- 1 lemon zested
- 1 3/4 cup 3tbs(10 oz)sugar
- 5 tablespoon corn starch; (1.4 oz)
- 5 each yolks; (3.5 oz)
- 5 tablespoon butter; (2.5 oz)

- 1 14oz can kidney beans
- 1 cup black olives chopped
- 1 small can diced green chilies
- 1 cup shredded cheddar cheese
- 1/2 cup chopped onion
- 1/2 avocado cut into pieces

- 1 cup ranch dressing
- 1/2 cup salsa
