Easy Crockpot Potato Soup

Put the potatoes in the crockpot
- Opt:
- 1 30oz. bag of frozen diced hash browns
- 1 32 oz box of chicken broth
- 1 can of cream of chicken soup (10 oz)
- 1 pkg. cream cheese (8 oz, not fat free)
- 1 tbsp. garlic powder
- 2 tbsp. onion powder
- 1 tbsp. fresh rosemary, chopped + extra to taste (we used an extra 2 tbsp.)
- 3 oz bacon bits
- 1 cup shredded cheddar cheese
- 1 tbsp. garlic powder
- 2 tbsp. onion powder
- Salt and pepper to taste
Skinny Fettuccine Alfredo

Cook pasta al dente according to package directions, in generously salted water
- 12 ounces fettuccine (or any pasta shape)
- 1 Tbsp. olive oil
- 4 cloves garlic, pressed or minced
- 3 Tbsp. flour
- 1 cup chicken broth
- 1 cup low-fat milk (I used 1%)
- 3/4 cup freshly-grated Parmesan cheese
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- (optional topping: chopped fresh parsley)
Green Beans with Dried Cranberries and Hazelnuts

1. Preheat oven to 350 2
- 2/3 c hazelnuts
- 12 c water
- 1 1/2 lb green beans, trimmed
- 3 T hazelnut oil
- 1/3 c thinly sliced shalots
- 2/3 c dried cranberries
- 1/2 tsp salt
- 1/2 tsp black pepper
Broccoli salad

Mix broccoli, seeds, cr..
- 3 heads of broccoli - seperated into pieces
- 1/4 cup sunflower seeds
- 1/4 cup dried cranberries (or raisins)
- 2-3 tbs apple cider vinegar, ranch dressing (or mayo - my preference) bacon bits
Pumpkin Seeds

Preheat oven to 250 degrees
- 2 cups pumpkin seeds
- 3 Tablespoons butter , melted
- 2 teaspoons worcestershire
- 1 tablespoon fine sea salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon paprika
Chamomile-Strawberry-Orange Cold Brewed Tea

Preparation 1. Place 1 tea bag and 1 1/2 cups water in each of 8 pint-size canning jars with lids
- 8 chamomile tea bags
- 12 cups filtered water, at room temperature
- 2 small juice oranges (thin-skinned), peeled, cut into slices, and seeded
- 24 large strawberries, halved
- 4 teaspoons honey
- 4 teaspoons hot water
Chocolate Lava Cake

Preheat oven to 350°F 1
- Ingredients (4 people):
- 6 oz. Semi-Sweet baking chocolate
- 6 oz. butter (diced, room temperature)
- 3 eggs
- 1/2 cup Granulated sugar
- 1/3 cup flour
- butter for Ramekins

- 2 8oz cream cheese
- 1/4 c chopped onion
- 1 jar salsa
- 1 pound browned burger
- 1 can chili
- 1 pcakage grated cheese
Portugese Stuffed Pork Chops

Uses day old Papo Secos (Portuguese rolls)
- Chops:
- 6 pork chops (1 inch thick)
- 2 teaspoons salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- 2 teaspoons paprika
- 2 eggs (beaten)
- 2 cups seasoned bread crumbs
- Stuffing:
- 3 Papo Seco rolls (cut into cubes)
- 1 tablespoon olive oil
- 1 tablespoon butter or margarine
- 1 small onion (diced)
- 1 small celery stalk
- 2 cups chicken broth (or 1 chicken bouillon cube with 2 hot water)
- 1 tablespoon parsley (chopped)
- 1/2 teaspoon dried thyme
- 1 cup cooked corn
Creamy Broccoli Salad

Toss broccoli with bacon, onion, cranberries and sunflower kernels
- 1 lb. fresh broccoli, cut into bite sized pieces
- 1 lb. bacon, cooked and crumbled
- 1 small red onion, diced finely
- 1/2 cup dried cranberries
- 3/4 cup sunflower seed kernels
- 1 cup light mayonnaise
- 1/4 cup Truvia Baking Blend (or 1/2 cup sugar)
- 2 tsp. white vinegar
