Summer Vegetables with Sausage and Potatoes

- 1 lb baby red potatoes, cut in half or quartered
- 2 tsp oil
- 1/2 tsp garlic powder
- 1 tsp kosher salt
- fresh cracked pepper
- 14 oz Italian chicken sausage, sliced 1-inch thick
- 1 large onion, chopped
- 4-5 cloves garlic, smashed with the side of the knife
- 1/2 orange bell pepper, diced 1-inch squares
- 1/2 yellow bell pepper, diced 1-inch squares
- 1 red bell pepper, diced 1-inch squares
- 2 tbsp fresh rosemary (or other fresh herb such as thyme)
- 2 cups zucchini, 1/2 inch thick and quartered
Instant Pot Mac & Cheese

Always use freshly shredded cheese
- 16 oz elbow macaroni
- 4 C water
- 3 T butter
- 2 t salt
- 1 c heavy whipping cream (or Half and half, whole milk, or 12 oz evaporated milk)
- 2 C shredded cheddar
Crock Pot Meatball Subs

1.Place the diced onion evenly on the bottom of the crockpot
- 1 lb. of ground chicken (or ground turkey)
- 1/2 cup of bread crumbs
- 1 can of Italian style diced tomatoes
- 1 large egg, lightly beaten
- 2 tablespoon of Italian Herb seasoning
- 1 teaspoon of garlic salt seasoning
- 1/4 cup of grated Parmesan cheese
- 1/2 an onion, diced
- 1 – 24 oz jar of pasta sauce (or homemade)
- 1 cup of shredded mozzarella cheese
Clean Meatballs

Original recipe used 2.5 pounds ground chicken breast
- 2.5 lbs ground meat
- 3 egg whites
- 1 cup dried quick oats
- 2 medium green bell peppers
- 1 purple onion
- 2 TBS paprika
- 1 TBS chopped garlic
- 1 TBS dried basil
- 1 TBS oregano
- 1-2 TBS of fish sauce or you can add flavor with a pinch or two of salt
WW Chili

- 1 lb extra-lean ground beef, or ground turkey
- 1 tbsp fresh garlic, minced
- 1 large red bell pepper, seeded and diced
- 1 large green bell pepper, seeded and diced
- 2 tbsp chili powder
- 2 tsp cumin
- 1 can (28 oz) crushed tomatoes
- 1 can (15 oz) red kidney beans, drained and rinsed
- 1 sweet onion, chopped
- 1 ⁄4 cup canned diced green chiles, or 1 fresh jalapeno pepper, seeded and finely chopped
- 2 tbsp tomato paste
- 1 black pepper, to taste

- 2-3 heads of garlic
- 1 whole chicken 4 to 5 pounds
- Fresh rosemary, or any fresh herbs
- All-purpose steak seasoning or salt and pepper
