Grilled Pineapple with Mint Sugar

Preheat grill or grill pan to medium high
- 3 TB sugar
- 2 TB chopped fresh mint leaves
- 3/4 tsp grated lime rind
- 1 Medium pineapple - peeled, cored, cut in 12 wedges
- cooking spray
- 1 TB melted butter
Strawberry Peach Parfait

Makes 6 parfaits
- 1.5 c plain fat free greek yogurt, divided
- 3 oz of 1/3 less fate cream cheese, softened
- 4.5 TB powdered sugar, divided
- 4 1/2 TB peach brandy, orange liquor or peach nector
- 3/4 Tsp finely grated lime rind
- 1.5 c chopped strawberries
- 1.5 c chopped, peeled peaches
- 5 (1.5oz) individually wrapped pound cake slices (Sara Lee)
- 6 mint leaves (optional garnish)
Taco Casserole

1.Heat oven to 350. 2.Heat oil in a large skillet
- 2 ounces Tortilla Chips (about 24), plus additional for serving
- 1 Tbs Chili Oil (or olive oil and red pepper flakes)
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 pound Ground Chicken
- 2 Tbs Taco Seasoning
- 1 can Black Beans, drained
- 1 cup Hot Salsa
- 1 cup shredded Reduced Fat Cheddar Cheese
- Optional: Other toppings such as jalepenios, olives, etc.

Fluffy Egg Strata (Gina)

Recipe from Gina Bruner Serves 6-8
- mix the first four ingredients then fold in:
- 12 eggs, beaten
- 1/2 c flour
- 1 tsp baking powder
- 1/2 tsp seasoning salt
- 1 c cottage cheese
- 1 c browned sausage
- 2 c shredded jack
- 1/2 c melted butter
- then add:
- 1 T chives
- 1/4 tsp dry mustard
- 1/4 tsp pepper
- 2 TBSP chopped green chilies
Banana Oatmeal Cookies

Bake at 350 for 15-20 minutes
- 3 mashed bananas (ripe)
- 1/3 cup apple sauce
- 2 cups oats
- 1/4 cup almond milk
- 1/2 cup raisins (optional)
- 1 tsp vanilla
- 1 tsp cinnamon
Ranch Chicken Salad Cups

Cook the bacon in a medium skillet over medium heat, stirring, until crisp, about 8 minutes
- 8 slices bacon, chopped
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 2 tablespoons buttermilk
- 3 tablespoons chopped scallions
- 2 tablespoons chopped fresh dill
- Kosher salt and freshly ground pepper
- 3 cups shredded rotisserie chicken (skin removed)
- 1 16 -ounce container Campari or other small vine-ripened tomatoes, quartered
- 1 avocado, diced
- 2 heads Bibb lettuce, leaves separated

- 2 cans low sodium crushed tomato (28 oz)
- 1 can tomato sauce
- 1 yellow onion - diced
- 5 cloves garlic - crushed

- pepper
- italian seasoning
- nutmeg
- sugar
Pumpkin Blondies
