Chicken Mozzarella Pasta

- 1 pound penne or rigatoni
- 2 tablespoons olive oil, plus more for drizzling
- 2 boneless, skinless chicken breasts, cut into bite-size pieces
- Salt and freshly ground black pepper
- 2 cloves garlic, minced
- 1 large onion, finely diced
- One 25-ounce jar good-quality marinara sauce
- 1/2 teaspoon crushed red pepper flakes, or more to taste
- 2 tablespoons minced fresh parsley
- 8 ounces fresh mozzarella, cut into medium cubes
- 1/4 cup Parmesan shavings, plus grated Parmesan, for serving
- 12 basil leaves, cut into chiffonade
Zucchini Love Muffins

Preheat oven to 350 degrees
- 3 cups shredded zucchini
- 1/3 cup coconut oil (room temp)
- 1/3 cup applesauce or pureed sweet potato
- 1 1/3 cup honey
- 2 eggs beaten
- 2 tsp real vanilla extract
- 2 1/2 cup flour
- 2 tsp cinnamon
- 2 tsp ginger
- 1/2 tsp nutmeg
- 1/2 tsp sea salt
- 2 tsp baking soda
- 2 tsp orange zest
- 1/2 c walnuts or pecans (opt)
- 1/2 c dried cherries, cranberries or raisins (opt)
- Chocolate hazelnut spread

Make dough according to package and let it rise
- 1 lb hamburger
- 1 lb sausage
- 2 pkgs colslaw (green, purple and with carrot shreds)
- Onion
- jamaica jerk seasoning
- 2-3 packages of Pillsbury hot roll mix

- 1/4 cup mayonnaise
- 1-2 teaspoons chili powder
- 1/4 teaspoon salt
- 4 tilapia loins or filets (or other mild white fish)
- 1 1/2 cups fresh or frozen corn (thawed if using frozen)
- lime wedges, for serving
Tex-Mex Beef Tacos

- Cooking spray
- 1 cup chopped onion
- 2 garlic cloves, minced
- 1 pound ground sirloin
- 1 cup frozen whole-kernel corn
- 1/2 cup water
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (8-ounce) can tomato sauce
- 1 to 3 drained canned chipotle chiles in adobo sauce, chopped
- 10 (8-inch) fat-free flour tortillas
Nectarine and Berry Crumble

Preparation 1. Preheat oven to 400°
- Topping:
- 1.5 ounces whole-wheat pastry flour (about 1/3 cup)
- 1.5 ounces almond flour (about 1/3 cup)
- 2 1/2 tablespoons sugar
- 3 tablespoons butter, cubed
- Cooking spray
- Filling:
- 2 pounds ripe nectarines, sliced
- 3 tablespoons sugar
- 1 pint raspberries
- 2 teaspoons vanilla extract
- 1/4 teaspoon grated whole nutmeg
Spanish Rice (Low Sodium)

Makes 3 cups 8.6 mg sodium per 1/2 c
- 2 Tbsp Vegetable Oil
- 2 tsp Cumin
- 2 tsp Chili Powder (Salt Free)
- 2 tsp Spanish Paprika (or Pimenton)
- 1 Medium Onion (chopped)
- 1 Medium Red Bell Pepper (chopped)
- 1 12 oz Can of Crushed Tomatoes (no salt added or the lowest sodium you can find)
- 2 cups Long Grain White Rice (uncooked)
- 2 cups water

Brown ground chuck. Add all canned items into a large pot
- 1 onion, Chopped
- 1 bell pepper, chopped
- 1 14oz can stewed tomatoes
- 4 8oz cans tomato sauce
- 1 14 oz can ranch style beans
- 1 14 oz can kidney beans
- 1 14 oz can pinto beans
- 1 10oz can rotel diced tomatoes
- 1 1.25 oz package McCormick mild Chili seasoning
- 2 lbs ground chuck
Apple Crisp (Laura)

- 2 c flour
- 2 c sugar
- 1 c soft butter
- 4 tsp baking powder
- 2 c cold water (or 1 c water, 1 c apple juice)
- Cinnamon and sugar to taste
- Apples - enough to fill a 9x13 pan 1/2 to 3/4 full.
